    Can you freeze it in ice cube trays and use it later in casseroles etc? I have two ends of bottles to use up - one is going into today's pheasant casserole. If it can be done - how long can I leave the cubes in the freezer?

    I've got one of those vacu-vin thingys - it's great! Wine is spoiled when it's exposed to the air; the gadget works by sucking out the excess air from the bottle and resealing the bottle with a plastic cork. It's well worth investing in one if you regularly have wine left over as the wine lasts much longer (several weeks, in my experience).

    Red wine shouldn't be kept in the fridge and white wine should only be stored in the fridge when cooling prior to serving. Don't ask me why, though - it's something that a wine merchant told me years ago.

    We find it cheaper to buy a box. I used to be a bit embarrassed but it tastes just as good to my untrained pallet, it lasts for ever and we can just have a glass when we want without it going off and ending up down the sink.

    And it means we always have some to offer visitors. (Who are usually equally frugal and do the same although theirs generally gets emptied much quicker!)

    Mine is never around long enough to go in the fridge........ seriously if there is any left I re cork it and leave it at the side of the wine rack, we usually use it up the next day or it goes into something I am cooking!!!!!

    Hope you remember to take the foil bag *out* of the box at the end of usage ... often there is still another glassful left in there that can been squeezed out ;)

    I brew my own wine, and it's true that air is the worst enemy of wine. Home brewed wine will keep longer than bought wine, but bought should still keep for a couple of weeks. One of the best places is under the sink, cool and dark. Decant if possible into a smaller bottle as Ted_Hutchinson says. If not, it freezes well in ice cube trays or small tubs, and is excellent for cooking or marinading.

    Yes, we often find a couple of glasses left in the bag,cut it open to get every last drop.

    Dont forget to save the foil bags and refill them with water (not as tricky as it seems with some of the taps on them) - freeze them to use as industrial sized ice packs.

    opened a bottle of wine last night - stressfull week - but only had one glass - put the cork straight back in - how long will it keep for??
