    i think that if you buy 'normal' wine from a supermarket, etc it doesnt keep well and really needs to be drunk within a year.. ive had to tip away more than one bottle of wine thats been sitting longer and has deffo gone off when opened.. i'm not an expert but i think its only 'good' wines that benefit from storing.

    99% of wines should be drunk in a year, maximum. It's only a small (tiny) minority of wines that improve with age.

    I used to know a wine buyer with Sainsbury's. She reckoned the average 'cellaring time' (aging time in the bottle after purchase) was about 2 hours and that any more would be a waste!

    If you want to freeze wine for later use in cooking, IME it's best to heat it in a saucepan first to boil the alcohol off.

    Once a wine is opened and exposed to oxygen then it really needs to be drunk within 24 hours. At first the oxygen makes the wine taste better but after a number of hours oxidation sets in and you end with nasty vinegar.

    In Chateau Nelski wine rarely sees the next day (I use oxidation as an excuse of course:D) but if by chance there is some left it goes in a sauce or the bin.

    I can back this up, without boiling it first it just turns to slush but boil for a few minutes and you get nice firm cubes.

    I've been making my own wines for more years than I care to remember, and usually put away a bottle of every batch I make for a year or two. It greatly improves with age, and the longer it is stored the more rough edges disappear. Two year old hedgerow port is impossible to beat, in my opinion.

    I've finished off plenty of bottles several days after they were initially opened, and they've always been drinkable.
    Saved over £20K in 20 years by brewing my own booze.

    The label on the wine boxes I buy say it will last 3 months from opening, but that's not true, it's always gone in a week!
    This is an open forum, anyone can post and I just did !

    Hello,

    As lidl has 70% off veg at the mo :), maybe just in NI, I have an aubergine (20p) courgettes (26p for 2) and some other veg that I plan to make roast veg with. Could I do a huge batch and freeze them? I have mushrooms peppers and sweet potato that I was going to put in as well. If can't freeze how long would it keep for? Quite fancy roast veg and hummous wraps!

    Ive got loads of fruit and veg that is going to go off because I wont be able to use it in time, its things like:-

    spinach
    carrotts
    onions
    apples
    pears
    kiwi fruit
    beansprouts
    mangos
    avacado

    Can any of these things be frozen? if they can, do I need to do anything to them before I freeze them?

    i've froze onions and carrot before. I just sliced/diced,spread on a tray and frozethen bagged up
