I think the squash and the cauli might turn a little mushy but I have frozen sliced carrots, without blanching, quite successfully. Just put them in a bag. As long as you aren't going to keep them more than a few weeks, it won't matter.
If you are really poor, I'd advise buying veg that are in season, like cabbage and parsnips. Red cabbage is lovely if you boil it in value orange juice instead of water and parsnips can be mashed, roasted or souped.
Also, Tesco are doing a Mother's Day offer of a chicken and an enormous bag of veg for £5. I bought two lots, even though I know I ought to be getting free range, because it was just too good to miss. Might be worth a try0 -
I would recommend buying frozen in the first place - much cheaper for most veg.0

I agree with buying frozen to start with, unless you are already currently inundated with vegetables. Particuarly if you're buying in somewhere like Iceland, or getting the bsics value range. I had a bag of frozen peppers, cost the same as one pepper and lastd about 6 months! Ended up in all sorts of bologniese/pasta/chilli kind of dishes and fantastic for bulking out with one of your five a day.
Just while on this thread, can anyone help me with my own frozen veg problem? I love the frozen 6 minutes in the microwave' baked potatoes - I take it if I bought jacket potaoes, and cooked them in the oven for an hour then froze them, this is exactly the same?0 -

I've frozen butternut & carrots with no issues. If I manage to get some bargains on RFQS or if I have uncooked leftovers I prepare them how I'd like to eat them. If I want to make soup out of the butternut I'd peel, cube & then freeze whereas if I was going to roast the butternut then I'd cut into chunks leaving the skin on.
Buying frozen veg is cheaper unless you can get some good reduced for quick sale veg.
Miss Liquorice, you can get the same potato affect yourself by cooking potatoes & then freezing. I prefer to cook mine in the microwave for about 10 mins & then to oven cook until crispy & then freeze.I can if I think I can.0 -
Can you freeze chopped peppers of will they be mushy? Will only use them for pasta sauces or roasted veg in the end.0

I do this all the time, peppers are fine frozen when you are using them in cooking for sauces, pizza toppings etc, just go a bit mushy so not too good for raw dishes like salad etcthey lose their 'crunch' when defrosted.

Hi all,
Just a quick couple of questions about freezing vegetables. Re: onions can I just slice and freeze then or should I blanche them first?
Chiilis.....have an abundance of green chillis. Can I freeze them? Should i slice first so can just use a few pieces as and when?
The same applies for broccoli/cauliflower/carrots- should I break into florets/slice and freeze raw or blanche them first?
Sorry to be a bit daft in this respect but this is the new MSE squirrel and not one that normally throws stuff out! :eek:

I don't blanche veg anymore, I used to but really can't tell the difference. Onions I just slice but be aware that they stink a bit in the freezer, I usually put them in 3 bags. Everything else I chop up and just put in a bag. They are often not seen again until I defrost the freezer, lol.0

Onions should keep well for 6 months or so in a cool place. Hang them in a string/net bag in the garage, letting the air get to them. No need to freeze.Doing voluntary work overseas for as long as it takes .......
My DD might make the odd post for me0
