I'm with U - give me a bottle of Chardonnay or Hock anyday of the week. Ooops I do have a bottle of Chardonnay or Hock EVERY day of the week. Hic. LOL
Freeze red wine in icecube trays so that it is ready to plop into stews casseroles, bolognaise etc. I mix fresh or dried herbs in with my wine to kill two birds with one stone while cooking, so to speak. HTHLife's a beach! Take your shoes off and feel the sand between your toes.0 -
I freeze wine dregs in ice cubes too - only ever manage a few at a time (Hic!) but they add up.
Not only can you add them to cooking....pile some white wine cubes in a glass and splash soda over them.
I do herbs in ice cubes too. Mint is especially good in ice cubes to add to drinks.
Also, slices of lemon or lime.0 -
You could get those 4 for a fiver small bottles of wine from morrisons. There are 2 glasses in each. One for the pot and one for me!:heart2:I have a child with autism.:heart2:0

I've only tried this once, because I had a bottle of cooking wine which we really couldn't drink up. Haven't been too impressed though, as it doesn't seem very solid and has managed to dribble all over freezer. Oh well. I usually buy wine to cook with and we then drink the rest.0

Wine won't freeze solid like ice because of the alcohol content, which has a much lower freezing point than water. Also, it's not a good idea to cook with any wine that you wouldn't drink, or don't like, as it will affect the flavour of the dish and maybe ruin your meal"An Ye Harm None, Do What Ye Will"

Thanx peeps. I think i'll have a look for those little ones in Morrisons then I might be able to use the whole bottle in a big pan of bolognese.......at least it might make the kids fall asleep a bit earlier !! :j0

I dont bother using ice cube trays but re use small Tupperware etc. I disagree about inferior wine spoiling the dish- it will break down the connective tissue of some cheaper meats and enhance the dish.
I open freeze slices of lime and lemon and then put in plastic bags ready for drinks either hot lemon or cold drinks!0 -
I don't freeze it but keep a stoppered bottle on the kitchen unit of mixed dregs and anything undrinkable. Have a bottle on the go since Nov and it hasn't gone off and is fine for spag bol, casserole etc NB this is red - not sure white would keep in the same way and we only really drink red (well DH does so......) :beer:“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”

There was an episode of Nigella bites where she mentioned that after dinner parties she tips the dregs from people's wine glasses into plastic ziplock bags for future use in cooking. Apparently her guests are horrified, but I admire her way of thinking.
