There was an episode of Nigella bites where she mentioned that after dinner parties she tips the dregs from people's wine glasses into plastic ziplock bags for future use in cooking. Apparently her guests are horrified, but I admire her way of thinking.

I never leave any in the glass, though.

That is sooo disgusting. I suppose cooking will kill off any germs but still.... eurghhh

I need white wine for a mushroom soup I am making, but since having my second daughter I am allergic to white wine (other than in cooking). Boo hoo

I don't want to have to cook the whole bottle, but I don't want to waste it either.

Does anyone know if it can be frozen?
  • I saw Nigella do it once, so it must be ok.

Perfectly. I do it regularly for all sorts of things. Red freezes well too.
I'd rather be a could-be if I cannot be an are; because a could-be is a maybe who is reaching for a star. I'd rather be a has-been than a might-have-been, by far; for a might have-been has never been, but a has was once an are – Milton Berle

I have a couple of ice trays reserved for the job, any white or red dregs are poured in, and dug out when required for a recipe. Waste not and all that.

I do it often. I can't taste a difference. Not sure whether sparkling wine freezes okay though.

    No.

    It cannot.

    Its a tragedy.

You have to drink it all.

    Now.

Within 1 hour of the bottle being open.

    Honest.

    Its fact.

Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...

Yup, that's how it works in my house too :D Wine never freezes completely solid like ice, it always seems a little mushy round the edges, presumably it's the alcohol that doesn't freeze.

I've found dry cider works well in place of any kind of wine, so if you aren't allergic to that try it next time you make mushroom soup.

White wine freezes fine, but will also be ok for cooking if you keep it in the fridge, so it depends where you have the most room.
