Wine never freezes completely solid like ice, it always seems a little mushy round the edges, presumably it's the alcohol that doesn't freeze.
I've found dry cider works well in place of any kind of wine, so if you aren't allergic to that try it next time you make mushroom soup.

It reminds me of an episode of Black Books where Dylan Moran played a cantankerous owner of a little book shop. One Episode he told Manny (played by Bill Bailey) to go get him an ice lolly out of the freezer. Manny returned with a bottle of red wine with a wooden stick poking out of the top, Dylan Moran held the stick and smashed the glass bottle to reveal his red wine ice lolly, lol!.....0

Wine does keep in a screw top bottle in the fridge for several weeks - it might not be perfect for drinking but it's fine for cooking. I've freeze white wine okay and it's been fine for cooking, but when I use the ice cubes in a glass of wine (too cool it more quickly 'cause I'm impatient:rolleyes: ) I end up with sediment in the bottom of the glass. Is there a way to avoid this?0

I have a really stupid question to ask! Can you freeze red wine on it's own, such as in ice trays? I've opened a bottle of cheapo wine for cooking, but still have 2 thirds left. Yes freezing leftover red wine in ice cube trays is ideal for using a cube or two to make gravies in future!
Once frozen transfer out of trays and into a freezer bag.

I freeze it in ice cube trays then stick around 6 cubes in if I'm making a bolognese suace etc.
If you decant it into a plastic tub from the ice cube trays it doesn't stay in cubes so it must have a lower freezing point than water but it stays virtually frozen and useable. When this happens I just scoop out one or two tablespoons full and put them in the panTotal debt at 01/01/2010 £34,262 (Excludes mega mortgage) Daily interest £12.42

It's not a stupid question! I don't often get the chance to freeze winebut you can freeze in ice cubes or larger amounts for cooking if you want.
There's an earlier thread with more tips and advice on freezing wine so I've added your post to it to keep the suggestions together.
