Hi all,
I am thinking of doing some cooking this afternoon, and want to use white wine. However, this means opening a whole bottle, and in true MSE style, I want to make sure I use it wisely!!!
Does anyone know if it is OK to FREEZE wine in little batches to drop into risottos, stews etc?
It would also be useful to know if it's OK to freeze red wine too - this is the type that's open most often in my house and where there are often left overs after a meal. Freezing them would be so much more sensible that simply drinking them up cos they're there!!!

You can freeze left over wine in ice cube trays ...no problem. Just drop a cube or two into any dish that needs it during cooking.0

You can freeze any variety of wine, or you can just keep it in the fridge. It will be fine for cooking, if not for drinking. In fact, you can keep a bottle of 'leftovers' mixed together (probably keep white and red separate)0

I keep a wine box of cheap white wine for cooking. We go to France quite often and I buy the cheapest dry wine I can find. It's great for risottos and for sloshing over a chicken before roasting
And I'm not tempted to finish it!!It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0 -

I've frozen wine for years and had no problems. Just make sure the container is upright in the freezer as I have had a couple of leaks which can be a bit messy if it's red wine.
DD horrified a French housemate by freezing leftover wine.0 -

Hi,
I am going to Glastonbury in a week or so and I am considering buying a boz of wine (rose/white) - freezing the bag so it stays cool for as long as possible.
I know this thread has mainly talked about cooking with it - but would it still be 'manageable/palatable' to drink? does this effect the alcohol content?
