Churchmouse THANK YOU. You were right, the butternut squash soup is AMAZING and about the simplest recipe I could imagine (other than the painstaking process of chopping up the squash in the first place ) I had two helpings and now just need to portion up the rest for the freezer. Incidentally the quantities I used were: 1 large squash, 2 onions, just over a pint and a half of stock made with 2 chicken stock cubes, a very good sized knob of butter to start it off, and about half a pint of milk.
