  • Has anyone made these or have a Nigel Slater recipe book? I wonder if he meant for the couscous to go in the burger mix too? http://www.guardian.co.uk/lifeandstyle/2009/jun/14/nigel-slater-burgers-pork-chicken

I'd add grated green pepper, grated onion, minced garlic, breadcrumbs, an egg and Jamaican Jerk seasoning and then shape into burgers.

  • Meatballs are amazing no matter what mince you use, just add onion, and lots of spice (Paprika & smoked paprika work very well) and everyone will love them. I cook mine in a frying pan on low heat with a lid on (to get them to cook in the middle) once finished remove meatballs and add cream and deglaze the plan and use cream as a 'gravy' for the mash or chips!!

    I'm hungry now

We had pork meat balls last night but they are just as good made with turkey.

Grate an onion, a carrot or a courgette or both, one clove garlic, a few finely chopped musrhrooms and mix with the mince. Season to own liking and make into balls, chill in freezer for a while then I cook them in the oven and serve with pasta and a sauce.

You can add lots of other things such as grated lemon rind, chopped chilli, bread crumbs if you have any that want using (dont use too many though I had one stale round of wholemeal bread and used that last time.)

Also nice with some very small bits of cheese stuffed inside but I see that Oh doesnt eat cheese.

I regularly use turkey mince for anything I'd normally use beef mince for - if I could afford it.

Turkey mince is cheaper and lower in fat, which good for you and also means that it doesn't reduce down so much and goes further.
The acquisition of wealth is no longer the driving force in my life. :)
  • We regularly have turkey burgers, they are delicious and much healthier. I usually add ginger, corriander and a pinch of chilli flakes or a red chilli chopped really small to give them a thai flavour. Yum yum!
