    I'd love the recipe for this as my housemate is Hindu so I can't bring beef into the house :( this breaks my heart as its such a staple food for so many things!! However, I'd rather not upset the way of things here. Ill watch out for the recipe :) Thanks RC

    I always think chilli tastes better the day after or after being frozen as it gives the meat a chance to marinate in the spices. So I'd suggest you do that with the turkey chilli so the meat takes on the spicy taste.

    I can't eat any red meat at all just now :( and Chilli is also one of my favs!

    I did try it with Turkey mince but TBH it's not, what shall we say, "wow, that was good" (it does work really well as a bolognaise meat though!:))

    I then tried it with Quorn mince and it's much better with this:T

  • as someone else suggested a few squares of dark chocolate really helps boost the intensity of flavour of chilli. I sometimes add a substantial squirt of BBQ sauce towards the end of cooking too, especially if it's going to be with nachos or potato wedges.

    Have to agree with this - in fact I make a veggie chilli much more often now; or use quorn. I also use turkey mince in cottage pie, precooking with onion and carrot first and adding a stock cube.

    Right here's the recipe. I've put in the meat and the veggie choices:-

    olive oil or vegetable oil
    500g turkey mince/Quorn mince
    1 onion
    3 cloves garlic
    1 beef stock cube/1 mushroom stock cube
    2 cans chopped tomatoes
    1 tube tomato puree
    1/2 tsp onion powder
    1/4 tumeric
    1 tbsp worcestershire sauce/veggie version
    fresh chillies to taste (if they are small I use 2) chopped finely
    water
    bay leaf
    tin of kidney beans




    method:

    In a large pan add a glug of oil and let it heat up. Once its hot add the cloves of garlic (chopped finely) and the onion (again chopped finely). Let them brown and keep them moving, add the mince and once it starts to cook add 1/4 cup water. Keep stirring. Once the mince has cooked through add the chopped tomatoes, stir then add the puree and the bay leaf. Stir over a low heat for a few minutes then add the stock cube, onion powder and chillies. Stir over a low heat for about 10 minutes, then add the worcestershire sauce. Stir and add the kidney beans (make sure they are well rinsed and drained). Cook for another 15 minutes, keep stirring. If the mixture becomes too dry add a little water and keep it moving as I've found turkey mince and quorn can stick easily. You want it simmering away so the kidney beans cook. Then serve, either with rice or in warm pitta bread.

    Forgot to say you can use the kallo stock cubes then its gluten free.

    Your life is dictated by the religion/background of an unrelated person that you just happen to share a roof with.....?

    What you eat is your own affair. Tell your housemate to learn some tolerance of other religions and persuasions.

    As does some coffee - sounds weird but I always add a little bit of coffee to my chilli, either espresso or just plain instant. It gives it an extra depth of flavour in the same way that chocolate does.
