    Hope you feel better soon. I always go for soup when any of us are feeling below par. Put an onion, some veggies of your choice, a tin of tomatoes, stock and a handful of rinsed lentils in a pan or the slow cooker and cook until the veggies are soft. Blend the whole lot with a stick blender for ease if you have one and you have a meal in a pot as it were. You could always add some meat if you wanted it - chunks of cooked ham, cooked sausage or chicken if you want the meat :) HTH

    Hi wssla,

    Risotto usually takes a lot of watching and stirring so might not be the best thing to make when your energy levels are low. I would agree with sunnygirl that soup is one of the easiest one pot meals that is nutritious and doesn't require too much effort to make. If you don't have any stock, you can use stock cubes instead.

    What about soup? If you're up to it you could chop the veg in bursts and have a rest in between. If you have any you could add lentils or beans to add a bit more protein. If you can do a decent sized batch it'd last you for several meals. Stew is another one too... You can go have a lie down while it is cooking too if you are using your slowcooker.

    I made a nice BBC good food recipe tonight and it took only a few minutes to put together. Its called pork and rice one pot (sorry, I don't know how to do a linky!). You make meatballs out of sausages but you could just do it with whole sausages I'm sure.

    Wssal00 I hope you feel better soon. In the meantime how about a quick salad? Maybe with a bit of grilled meat if you're feeling up to it. Or a stew? You could sit at the dining table and get eveything chopped up and even cooking can be done in stages. Cook onions, have a rest, cook meat, have a rest etc.

    Eggs are your friend! Good for you and quick to eat - you could quickly fry off some veggies and make a frittata/spanish omelette?

    Sounds lovely for tomorrow guys thanks :) i ended up making a baked risotto which basically involved me cooking a piece of chicken with some sliced mushroom in a casserole dish taking it out of the oven and adding some risotto rice and some stock and covering it and cooking in the oven for another 30 mins. Filled me up which was handy.

  • I would go for a stew in your slow cooker. Sit at your kitchen table to peel and chop, prep the ingredients and add to the slow cooker one at a time taking a rest when you feel the need. Start off with the things which take longest to cook such as carrots and then softer veg such a courgettes last. It won`t matter if it takes a few hours to get it all done and you will have several hearty meals out of it - you could even blend some of it into soup if you wanted.
