From a Kebab Shop in the North East of England
1 large onion,
half small white cabbage,
1 tin tomatoes,
20 birdseye chillies (topped n tailed)
1 tube of tomato puree,
Blend the whole lot together in a food blender or use a stick blender and you're done

i agree, you need the takeaway secret book. you can usually get it on amazon for less than £4 and the donner kebab is amazing!0

I'm hoping to make some chilli sauce for Christmas
I've got a random little mix of fresh chillies
I've got 5 bird eye chillies, 3 home grown habanero's and 1 scotch bonnet
What kind of sauce could I make? I'm thinking like sweet chilli sauce
I already have small kilner jars, around 200ml I'd imagine
Any recipe ideas for that number of chillies?
Ideally I'd like to make a range of heats, so I don't blow the brains off someone, or bore others0 -

I'll second the nigella chilli jam, its really easy to make, and is blow-your-head-off gorgeous.
Will you mix the chillis? I think some are hotter than others - I used 4 "regular" ones and made a big jar (about 1/3 of the recipe) and its pretty fiery. I took the seeds out as well...
Might be worth a trial run but I love the stuff. If you are trying to be "healthy" it's nice smeared on celery that's been filled with soft cheese...Bossymoo
