A couple of suggestions on the OS forum there for you to read. Also if you got the Asda magasine (I just recycled mine so I cant tell you how but) I know there was a tip on roasting the seeds and eat them as a snack.0 -

You could make some Chutney. Here is the recipe:
Pumpkin Chutney Recipe
Ingredients:- 2lb pumpkin, peeled and chopped
- 11b tomatoes, peeled and chopped
- 2 cloves garlic, chopped
- 1 pint white vinegar
- 1 1/2 teaspoons allspice berries
- 1 1/2 teaspoons white peppercorns
- 11b onion, peeled and sliced
- 1 1/2lb brown sugar
- 1 1/2 tablespoons salt
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons of black peppercorns
Place the chopped pumpkin in a pan and cover with vinegar, add the sliced onions, chopped garlic and chopped tomatoes.
Crush the allspice and peppercorns, add both to the pan then stir thoroughly and leave for about 1 hour.
Add the ginger and salt to the mixture and bring it to the boil slowly.
Simmer for about 45 minutes, stirring occasionally and taking care that the consistency does not get too much like that of jam.
Allow the chutney to cool, pour it into clean jars, cover and store.

If you've never made one before, can I suggest a pumpkin pie (sweet one). It is surprisingly delicious and after making one about 5 years ago now, I do one every year. Plenty of recipes on the net and it does take a bit of time to do but is well worth it !:jWeight loss to date 1st 11.5lb :j0

Try This:-
Ingredients
1 small pumpkin or butternut squash, seeded and quartered
salt
freshly ground black pepper
olive oil for basting
250g/8¾oz frozen chestnuts
1 red pepper, seeded and sliced
2-3 sticks celery, sliced
150g/5¼oz cup mushrooms, sliced
1/3 cucumber, diced
For the dressing
3cm/1.5in fresh ginger, grated
2-3 cloves garlic, crushed
1 tbsp poppy seeds
1 tbsp sesame seeds
4 tbsp olive oil
3 tbsp sesame oil
3 tbsp dark soy sauce
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Roast the pumpkin, sprinkled with salt and pepper and drizzled with oil, for 20 minutes, then add the frozen chestnuts and roast for a further 15 minutes.
3. Leave to cool.
4. If using butternut squash, roast for 30 minutes before adding the nuts.
5. Scoop or chop the pumpkin or butternut squash into bite-sized pieces.
6. Mix with the chestnuts and the remaining prepared vegetables.
7. For the dressing, whisk the dressing ingredients together, pour over the salad and toss well before serving.

Put it on the compost heap :rolleyes: Haloween pumpkins grow fast, get big, and absorb loads of water. That makes the flesh very watery and tasteless, IMHODon't waste your energy on making this pumpkin edible - buy a smaller one that's been grown for flavour to eat - butternut squash is great.
