Anyone got any tips for hollowing out the pumpkin without cutting off my fingers? There must be an easy way to do it surely?
MiL & I actually gave up 1 year and carved them into the shapes, scooped out the seeds and then used then like that because we couldn't get the flesh out. I'm interested in this thread as I fancy trying to make pumpkin soup. what has stopped me is that I am sure I have read (on here somewhere!) that the pumkins made for Halloween are not the best ones for eating; they can be watery and tasteless as they are grown for size and not for taste.
ANyones thoughts on this would be appreciated.but I only made soup with it (which tasted fine) so don't know what it would be like for, say, a pie. Try roasting it instead of peeling and boiling, it adds a richer, nuttier flavour. HTH.

I'm just about to make pumpkin soup for the first time! What about the seeds? I have rinsed them off, this may sound daft but do I need to roast them or can they be eaten as they are?

You can roast the seeds and eat them but a warning here.....the varieties of pumpkin grown to be jack o lanterns don't taste that great. They tend to be all water and bland flesh. You can buy special pumpkins grown for flavour but they aren't the big carving beasties.....The West Indian stall on our market has cracking pumpkin! You buy a chunk and it tastes fab.
If you do use your carving pumpkin roast it first to concentrate what flavour there is and season it up with spices and stuff......or (frivolous I know) just buy a can of Libbys Pumpkin Puree for £1.19 from Waitrose....enough for one pumpkin pie with a recipe on the back!Well behaved women rarely make history.0 -

can anyone help my freind. it looks like she has what could be carpet bugs. does anyone have any old fashioned , good ways that work without having to shell out on expensive chemical products that cause a reacton in their daughters health?0

My lovely son went pumpkin shopping yesterday, and from the butcher at the top of our street he came back with the biggest he could find. It was nearly 3 stone.
We have now already had pumpkin soup for dinner. Ive frozen several single person helpings and still have a 1/3 of a stock pot and the slow cooker full of the stuff.

Yep! We've had soup 2 days running made with the bits I cut out of the pumpkin plus some other veg. Very delicious it was too;)
The rest of the pumpkin I will peel and cook with a little water then puree with a stick blender. I shall freeze it in small tubs for use in muffins and more soup.0 -
Don't forget to keep some in the freezer non-pureed but diced to make pumpkin risotto! A great standby if you need to make a meal out of nothing very quickly.
