Recipes with pumpkin??

I think the best way of freezing pumpkin for later use is to roast/bake it first rather than trying to freeze it raw. Drizzle with a little butter or olive oil and then mash or freeze it in chunks. Roasting will concentrate the sugar in it and improve the flavour. Boiling it may not necessarily harm it but I'm sure roasting will give you a better result.0

well.....i just roasted chunks of the tesco (99p) ultra cheapo pumpkin...it tasted disgusting!!! ..despite using best olive oil and cumin seeds. Very disappointing. I'm wondering if these pumpkins were really just for halloween carvings. It really was inedible.
Yes you can use carving pumpkins for eating - we do every year. We buy them after halloween when they are going for a song at the local garden centre.
Basically cook the pumpkin the way you would cook swede - boil in chicken or veg stock - add carrot, onion, potato, herbs and when all cooked puree until smooth and add milk to make into soup - our pumpkin lasted 6 weeks after being cut - kept it on the top of the fridge.
Pumpkin soup is great

My favourite way to cook pumpkin and squash is to roast chunks in oil with plenty of salt and pepper. Yummy!!!!0

I'm with Mel2. Also good with a sprinkling of Cajun seasoning or Season All before roasting.0
