    Last night I made a pumpkin pie for the first time ever (and it was amazing - Abel and Cole recipe :T). Anyway, I was about to throw the seeds and stringy bit away when I thought about you lot, and that there was possibly something that could be done with them. So I roasted them while the pie baked, so about 40 mins with a bit of Olive Oil and salt. They puffed up and went golden brown, absolutely nothing like pumpkin seeds I've bought in the past, and were absolutely delicious.

    I just read online you can do the same thing with butternut squash seeds so next time I get one I'll have to give it a whirl - thanks for the idea.
    Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)

    I store mine in a jam jar and add them to HM granola ;) As this has fallen from the front page of OS, I'll add this to the existing thread on what to do with pumpkin to keep ideas together :D

    A quick question for you all, can you freeze pumpkin? If so what is the best way?

    I would also appreciate any recipes as I have two 50 pound pumpkins to scoop out and make into lanterns and dont want to waste the filling

  • I think you can freeze it raw but I prefer to cook it until soft with a little water. If you cook it until really soft you can puree it with a blender and freeze it like that to use in muffins and cakes.

    I usually buy pumpkins just for cooking purposes. I havent worked out how to do links yet - not sure if you can freeze pumpkin flesh uncooked

    But there is a good recipe for pumpkin pie here on the forums. I also tend to make the Hugh Fearnley Whittingstall pumpkin soup - try channel 4 /food.

    You can certainly freeze soups etc - i am sure others will be along soon to help you out

    If you roast it in foil [no baking tray - just spray the inside of the foil with oil and seal] for about 30-45 mins, then it shouldn't need pureeing - it just mashes down nicely with a spoon

    I always weigh my pumpkin out into what i need for soup or the amount i need for cakes etc and then boil in water until cooked. I then freeze it. I usually defrost before using and i just pour away any excess water after defrosting. This way i can take out a portion ready weighed from my freezer.

    If it's the big pumpkins sold in the supermarkets for carving they will have almost no flavor. It might not be worth saving the pumpkin :(
