Not sure if you're using cooked chicken or not, but I use the remains of a roast chicken for mine.
I fry a leek or two until if softens, then add some flour to the pan. I then use chicken stock (suppose you could use soup?) to make it into a sauce and add the chicken. Season if required!
I like pastry all around my pie, so line a case/tin with pastry, fill with the mixture then top with more pastry.

Thanks they sound lovely , I want to freeze my chicken pies , so was thinking of cooking a fresh chicken and making roast then curry and pie,
to get 3 meals out of it.

Hi mirry,
If you're going to used cooked chicken add it to your sauce just before putting it into the pie as otherwise it can go stringy.

chicken , mushroom and thyme pie
fry a onion and sliced mushrooms untill nice n soft
meanwhile get some diced chicken leg put in a food bag with 1 tbsp flour and a pinch of thyme and shake bag untill all chicken coated
once onions mushrooms are soft add the chicken and cook untill coloured
then add 3/4 pt chicken stock and simmer add more or less is its too runny too dry
then i also add 1 cup single cream salt and pepper and simmer for about 10 mins
pop into a dish top with pastry and bake !0 -
just had a thought , I am using the chicken left over from a roast ,
then I make a pie and cook it (again)
then I want to freeze it and bake it again at a later date .
so that means the chicken has been cooked 3 times ,

I use left over roast chicken from the sunday roast. Add a tin of campbells condensed soup - either chicken or mushroom and add mushrooms and onions.
After filling the pie dish, i top it with shortcrust pastry and bake.
I cant cook but even i can manage this one

Been looking for a quick and easy recipe for chicken pie. its probably on here already, but I cant seem to find it! has anybody got a recipe? I make mine with a shortcrust pastry, leftover roast chicken and a white sauce and some sweetcorn. Dead simple and everyone loves it.0 -

There's an earlier thread with lots of recipes to choose from so I've added your thread to it to keep the recipes together.
One thing I would add is that if you are using leftover chicken don't add it to the gravy/sauce until just before you are putting the pie together as it can go a bit stringy if it's over cooked.
