    I'd be inclined to cook a whole batch of them in their skins (enough for a family meal of your choice) and then mash them without skinning. Makes a nice rustic mash which, if you need to, can be disguised by using it as a topping for shepherd's pie or corned beef hash.

    I'm also quite happy to serve hot cooked potato (in any form) along side a salad - big ones boiled, roasted, baked, or mash :)

    This may be a really daft question, but I have a cake tin:

    Is there any reason I can't use it as a roasting tin? :o
    If you lend someone a tenner and never see them again, it was probably worth it.

    Dosn't make much difference, the side look deep enough to me.

    Lay foil over tray and out over the sides, like a bed sheet over the bed :D put meat in middle, gather foil over the top like a tent and fold down. HTH

    Nope - I use a small square non-stick cake tin for roasting chicken breasts, Cumberland sausage, vegetables etc. They don't know they're not in a proper roasting tin ;)

    They look good, I just assumed meat when you said roast, didn't think of veggies, my mistake :o

    I have a box of fake mash in the cupboard ( part of a Lucky Box from AP).
    I tried using some as a topping for a shepherd's pie a while back and we all hated the artificial 'glueiness' of it.

    Is there anything else I can do with it? I looked but couldn't find a thread anywhere. I know there has to be one!!!

    Could I use it to make potato bread maybe? I'm happy to try anything really. It comes in sachets , one of which would make maybe 4 cereal bowls full. I have 3 sachets left to use up.

    I would be happy to bake with it, but not to use it in its intended form IYKWIM!
