Ok so I'm inpatient and the stock is now on the hob lol! In the pot is the chicken carcass, carrots, onions, some garlic and fresh parsley that needed using.

Boil it for at least an hour then strain and put in the fridge -should go like jelly.
I don't normally put garlic in mine but as you have why not make a Thai soup- teapoon thai curry paste , tin coconut milk an the veg to suit0 -

if leave it to simmer awaay for 45 minutes will it be safe to eat??????

I know it's turkey mince, but it's still mince, ie thin slivers. I don't think it will take anything like that long to be 'safe'.
When I'm doing lamb mince, it usually gets thrown around a frying pan for a few minutes, then 10 minutes with a tin of tomatoes on top.

DH is tea total and there have been several recipe's I have seen that need alcohol to make them. I have managed with a few to substitute stock for the booze and it has worked ok but I have seen a few recipes I know will not work well with the change. If I do use booze will the alcohol burn off while cooking or is it not a good idea to serve a meal with alcohol to someone teatotal?
