The veg will be tasteless after you make the stock.
I suppose you could eat it but it won't be any good for another stock.
It may be too soggy for a casserole.0 -

I have to admit, I use the water from cooking veg like normal. Store it in a jug and put in the fridge ready for the following day e.g. I am making my roast gravy at the same time as cooking the veg, so having this in the fridge is ideal.
