Thanks. There's a little cafe I know that sells them, and I thought I'd try to make them myself :)

I did bake them blind first, and they turned out nice.

    Here's a pic.

    Hi

What about spanish omelette/Fritatta? Couscous salad? Rice salad?

I use this method to make the couscous itself and chuck in some frozen peas/sweetcorn/frozen cooked beans etc when adding the boiling water. Then i add a dash of olive oil, a dash of lemon juice, some fresh/dried chopped chilli/ chilli flakes, cucumber, tomatoes, peppers, and what ever else i have needs used. I dry roast some nuts and seeds in a frying pan for a couple of mins too and throw those in so gives nicve crunch and texture. OH and black pepper. It can also be bound with an egg and made into couscous burgers - i add some grated cheese. For the burgers/fritters, I just make it up how i like it and use the basic principle rather than the recipe.

For fritatta, chuck veg in frying pan with some oil and onions etc. Fry few mins, throw on some beaten eggs . Once it sets underneath, top with grated cheese and pop under a grill to crisp up - nice hot or cold and can be adapted to use what ever you have in.

    Lettuce cucumber and tomato
may help as may glut of cucumbers

I'll merge this later for you

Hi viv0147, what do you have in the storecupboard?
We could give more ideas, that are relevant, if we know what you have to hand.
For myself I am an optimist - there does not seem to be much use being anything else.

Hi all i am having to call on your expertise in the freezing area :o
Normally i am of the opinion that EVERYTHING can be frozen but this time i am wondering the best way to go about it!!
I have decided to make the most of the oven being on (baking bread) and have chucked in some peppers to roast aswell. Now I plan on using these for stuffed peppers and will be making the filling tonight aswell. What i am unsure of is whether to freeze the peppers and "stuffing" seperately or whether they will be ok stuffed and then frozen.............any thoughts please :D
