I think you just freeze them in their skins (which apparently turn black) and then defrost when needed, but I have never tried this as they don't last that long in my house ;)

NO, No. No, freeze bananas without the skins, otherwise you´ll have a really mucky time when they defrost and you try to skin them.....they go all mushy!
    Trust me

You can remove the skins while they're still frozen :-)

Thanks very much everyone - I'll stick them in the freezer when I get home from work tonight (and yes, I really should be working at the moment! :o)

Hopefully the thought of a cake-making session will sustain me through reading the rest of this stack of reports .... zzzz ....

I couldn´t, they stuck on fast, even tried potatoe peeler to get skin off, so now bananas are always frozen without skins, quite often chopped up as well

Hm, mine always come off easily. I wonder why mine do and yours don't!

I think I'll freeze mine without skins, just to be on the safe side. Might save a bit of swearing come the weekend!

Perhaps it´s something to do with the thickness of the skins. When they star to get over ripe ours seem to get thinner

I freeze them without the skins for using in baking. There's a thread discussing freeing bananas that may help: Freezing bananas.

Thanks very much for this, Pink. I know I should have run a search before posting the question but I was in a bit of a hurry yesterday - I promise I won't do it again! :D
