I think you just freeze them in their skins (which apparently turn black) and then defrost when needed, but I have never tried this as they don't last that long in my houseSealed pot Member target £200 - No. 151

NO, No. No, freeze bananas without the skins, otherwise you´ll have a really mucky time when they defrost and you try to skin them.....they go all mushy!

Perhaps it´s something to do with the thickness of the skins. When they star to get over ripe ours seem to get thinner

I freeze them without the skins for using in baking. There's a thread discussing freeing bananas that may help: Freezing bananas.
