    hi ,does anyone know if you can freeze cranberry sauce or creamed horshradish sauce ,my local farmfoods were selling 1 lt jars of both today for 39p so loving a bargain i bought them .the only thing is i would like to decant them into smaller tubs and freeze as once they are opened they will go off before i use them up
  • Hi Folks - as Im only up to page 17 of the original Weezl challenge, I thought I'd post my bran cake recipe here.

    Breakfast Brancake

    300g mixed dried fruits
    100g wholemeal self raising flour
    100g All Bran
    ½ pt semi skimmed milk
    1 egg (or two tablespoons apple sauce and pinch bicarb)
    Generous pinch of mixed spice

    Soak All Bran, dried druits and milk overnight.
    Mix everything up next morning.
    Cook at 180C/350F/Gas mark 4 for one hour

    I'm adverse to dumping big loads of sugar in stuff and the All Bran and fruit, soaked, draws out their sweetness. I will post calories, etc., in a bit.

    1637 calories for lot, and great chunkloads of iron, B vits and fibre, small calc from milk and B12 from egg.

  • Baked Bean Fritters

    1 ¾ cups self raising flour
    2 teaspoons baking powder
    1 teaspoon salt
    1/2 teaspoon pepper
    4 eggs
    2 (16 oz) cans baked beans, drained and sauce reserved
    1/2 green pepper chopped
    1 small onion, chopped
    1 tablespoon brown sugar or blackstrap molasses
    1 teaspoon garlic powder
    1 cup vegetable oil



    1. In a large bowl, combine the flour, baking powder, salt, pepper, and eggs until well blended. 2. Add the remaining ingredients, except the reserved sauce and the oil.
    3. In a large saucepan, heat the oil over medium-high heat.
    4. Drop the batter by teaspoonfuls into the oil; brown fritters on both sides, turning when the sides begin to bubble, after about 1 minute.
    5. When fritters are golden and crispy all over, drain on kitchen towel.
    6. Repeat until all the batter is used.
    7. Meanwhile, in a small saucepan, heat the reserved baked bean sauce over low heat until warm.
    8. Serve as a dipping sauce with the fritters.

  • One of my favourite budget standbys - great for breakfast, warm out of the oven, or for a cold snack. Really filling and you can vary the ingredients. I like to replace apple sauce with either canned or fresh cooked pumpkin, and hedgerow blackberries could go in place of (expensive) blueberries. Great for vit a and antioxidants.

    Blueberry Oat Bake

    2 cups raw oats
    1-1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup skimmed milk
    2 med beaten eggs
    1 cup unsweetened applesauce (or pumpkin, well drained)
    1/4 to 1/2 cup Splenda, honey or other sweetener of choice - I just put in a tablespoon of date syrup that we get out here
    1/2 cup blueberries
    1-2 teaspoons lemon zest
    1 teaspoon vanilla extract (optional)

    10 servings.

    Preheat oven to 350F. Combine dry ingredients. Separately combine wet ingredients. Mix together. Bake in greased 8" square pan,or swiss roll pan, for 40-45 minutes. Cut into 10 squares. Works out to be about 100 cals per slice, more depending on what sweetener you use.

  • Btw, I just made Weezl's olive tapenade, but bunged in some sun dried toms and a bit of leftover labneh, which is local yoghurt cheese, too. Excellent :D.

    Just been for my morning "forage" of the local clearance sections, and gleaned some information I didn't know.

    Got chatting to a member of staff in Somerfield who I got quite friendly with last year (I always seemed to be hovering as she did the final markdown of the day), and made some comment about one of todays not being good value. Normal price £2.69, 25% off at £2.01 -- but if you buy the full price ones they're on a 2 for £4 offer !!!! I also mentioned that sometimes they have stuff that's as good or a better deal at full price due to being on BOGOF.

    She said they're not allowed to over-ride prices so that multi-saves work out cheaper from the clearance until the next official markdown time, but that the BOGOF offers do still work!!

    So if something is £2 full price but also on BOGOF, and there are some on 50% off at £1 each -- then the clearance ones (provided they're available in the right multiple) will go through as BOGOF meaning you can have 2 for £1.

    I'll now be checking BOGOF items in clearance more carefully :)
