I've just popped a loaf of bread in and will have some fresh bread, cheese n chutneys for supper tonight (don't usually have supper but always get the munchies on a sat night :o so wanted to make sure we had something to nibble on !)

    Bargainhunter - thanks for sharing the spicy sausage casserole - that's gone in my recipe folder ! :D

    Weezl - be prepared, you may have to buy bigger again yet ! I think I had 3 bra shopping expeditions during my first pregnancy (I looked like Jordan by the time I was due ! :eek: ) - resemble something like peanuts now :rotfl: (joking !!!!!)

    plum pie - I shall keep an eye out for the other book too, wonder if they're much different ?

    Mrs M - how lucky are you !!!??? Someone up there is smiling on you :D Next gadget on my list is a blender, chopper, slicer thingy - to save my sore fingers from all the chopping when making the chutneys.

    Plan for tomorrow (because the weather is so awful here) is to make a madeira (sp?) cake for DD. She had an 'evacuation day' at school and part of it was tasting war-time food and she loved it so I promised I would make her one. Not sure what else but i'm in a cooking mood lately so might get some mince out of the freezer and do some lasagne's/bolognaise ready for next week. Must remember the lentils ! ;)

    hi, the ponies share their carrots with me - could you post spicy carrot chutney recipe so all family can have a jar for Christmas? Have tried to find a recipe withoout success.

    Hi everyone,
    i need to ask a quick question to Weezl or to anyone else who has made the apple cheese recipe.
    Do the jars need sealing in a pressure cooker or similar or do they tend to seal themselves once the lids are on?

    The reason i ask is that when i made jam the jars sealed themselves and the recipe said that this was enough, we are still eating the jam several months later and it has kept fine. I`m hoping that the apple cheese is the same.

    If anyone made it what did you do?

  • Now with all this talk of tuna and curries I thought I would share my tuna curry recipe. Bear in mind that I very much make things up as I go along so this might not be exact! It is delicious though (one of my housemates was writing down my 'recipe' whilst eating) so well worth a try.

    Serves 4

    1 onion, chopped
    2 tbsp curry paste
    2 medium potatoes, chopped into small chunks
    2 small tins tuna (whatever type you like!)
    1 pint stock (whatever type you like)
    large handful lentils (whatever type you like)
    1 dessertspoon sugar (whatever type you like, anyone sensing a pattern)
    Any herbs and spices that take your fancy (I added some ginger and some garam masala)

    Fry the onion in a little oil until softened, add the curry paste and the potatoes and stir through.
    Tip the stock over the top
    Add the lentils and tuna and any herbs and stir
    Leave to cook until the potatoes are cooked and the stock is almost absorbed
    Tip in the sugar and stir.
    Cook for another 5 minutes or as long as it takes to cook your rice because you forgot to put it on early enough ;)

    We ate ours with a piece of naan bread and rice cooked with a sachet of creamed coconut in.

    Can be adjusted to suit (e.g. make it hotter if you want !)

    2lb carrots (grated or chopped - I find grated better)
    2 onions - chopped
    1 clove garlic
    2 big handfuls raisins (I use 1/2 raisins and 1/2 chopped apricots)
    1/2 cup cane sugar (not sure what that equates to in gramms but I use my 'cup' from my bread machine and haven't gone wrong yet !)
    1 1/2 cups strongly brewed tea (4 teabags)
    1 1/2 cups cider vinegar (I've used white wine vinegar and it comes out fine)
    1 1/2 teaspoons mustard seeds
    8 red chillis (can add more or less depending on how hot you like it !)
    1 teaspoon cinnamon
    1 teaspoon allspice
    1/2 teaspoon coriander
    1/2 teaspoon cloves
    1 tablespoon curry powder (again can add more or less on how hot you want it)
    olive oil
    4 teaspoons chilli flakes and a little cayenne pepper
    Medium sized piece grated ginger
    1 tablespoon honey
    salt to taste

    Chop or grate carrots, chop onion, garlic and chillis.

    Brown onions in a pan with olive oil. Add garlic and mustard seeds. Stir to cook and then add spices and carrots.

    Finally, add rest of ingredients and cook until carrots are soft and jammy. It can take up to two hours slow cooking to bring out the flavours.

    Jar as with all other chutneys. Leave to mature for about 2 months. Open and enjoy !!!!



    I've got the turkey korma in the slow cooker and keep going in and lifting the lid to have a sniff :o - making my tummy rumble !!!!

    Got the last tub of apple delight out of the freezer so will have that for dessert with some custard. Not sure about total cost of tonight's dinner (for 5 of us) but easily under £3 !! :T

    Going to sit here and have a cuppa while I catch up then off to make a coconut cake :D .

    My slow cooker came with very strict warning about lifting the lid off -- if you do it for too long or even just too many times very quickly, then you have to add considerably to the cooking time :eek:

    Apple delight - found it on here somewhere, i'll see if I can find the link (give us a minute or two ;) ).

    cw18 - Ohh I didn't know that ! (got mine from a car boot sale so no instructions :rolleyes: ) I shall refrain from doing so for the rest of the afternoon :p .




    Ok, I can't find the post where it was (which is why I always write them down ! lol) but here's the recipe:

    2lbs cooking apples (or granny smiths)
    8oz self raising flour
    7oz porridge oats
    5oz demerara sugar
    5oz granulated sugar
    8oz raisins
    2oz finely choppe crystalised ginger
    5oz marg
    pinch salt (I didn't put this in and it tastes fine)

    Grease and flour a 10" by 10" tin
    Rub marg into flour and salt
    Att oats and dem sugar and sprinkle half on to bottom of roasting tin
    Peel and core apples, chop finely and add half onto the tin (on top of the oaty mix)
    Sprinkle on half of the gran sugar, then half of the raisins and half the ginger
    Repeat the apple/sugar/raisins/ginger layers
    Add remainder of oats mix and press down.
    Bake for 50-60 mins 180c/gas mark 4
    Serve hot with custard or eat cold !

    Tis very yummy ! Good for portioning up and freezing too.
