    I reckon that you could use millet in any recipe where you would normally use couscous for instance - different cooking time to be borne in mind of course. I guess you could also use millet in sorta risotto type recipes. I guess chickpeas could be used interchangeably with any other sort of dried bean in recipes - I would think you could even do a version of homemade baked beans with them (I know one can do a homemade version of baked beans with the usual ones - ie haricot beans) - so I presume you could follow a recipe like that and substitute chickpeas for haricot beans.

    Guess your lodger moved in yesterday then? Hope all is going well on that front.

  • I've also got some frozen chickpeas that need using up and I'm trying to choose between weezls hummous or chickpea and potato curry. The latter all the family could eat so it might be that. (I'm on my own with hummous :rolleyes:)

    Will root around in my folder because I think I've a recipe for soup and fritters using them. Mum arriving for the day in a bit so might have to be this evening when I post them. ;)

  • oh do share cheerfulness! Lodger is in ceridwen and will take a while to sort and settle.She made a lovey risotto and we have bonded over wine! Were very different but think will be ok...can prob learn alot from each other!
    Will try find millett recipes and report back...feel this may be an experement! Will make the hommus but with sun dried toms added asdont like it plain. Made a babanaand fruit cake today - 1 for me and one for neighbor who rehung my door for me!!

  • Here's the soup one first.

    This next one was from off these threads but I don't know who from so can't credit properly. I'll summarize what they said.

    Chickpea Soup

    140g chickpeas (soaked overnight)
    4 garlic cloves
    1 onion (fine chopped)
    4tbsp Olive oil
    55g bacon
    2 tsp rosemary (finely chopped)
    140g tinned tomatoes with juices
    300ml stock (chicken, beef or veg)
    salt and pepper

    Preheat oven to 170/325f/gas3
    Drain chickpeas, rinse and then place in a casserole dish suitable for hob and oven.
    Add enough water to cover by 1".
    Place on hob and bring to boil.
    Boil for 10 mins, removing foam on surface.
    Cover dish with lid and transfer to oven for 90 mins (until chickpeas are tender).
    Remove from oven.
    Add olive oil to a saucepan and sautee the garlic until golden brown.
    Remove and discard garlic, leaving oil in pan.
    Add onion and cook until soft.
    Add the bacon and cook until golden brown.
    Now add rosemary, tomatoes and their juices and stir well.
    Cover and simmer for 30 mins, stirring occasionally.
    Drain the chickpeas, add to the bacon/onion mixture, stir and cook for another 2 mins.
    Pour in the stock and cook for a final 20 mins.
    season with salt and lots of black pepper.

    The OP said that they served it with ciabatta bread and it was absolutely gorgeous.

    Looking at that method I'd be tempted to cook the chickpeas in the SC overnight as I'm cooking of electric so I try to avoid using my oven where possible.

    Now I've got to try and remember where the fritters recipe is. Too many recipes on scraps of paper in my folder and still not sure if it wasn't one of Delia's either. :rolleyes:

  • Found the fritter recipe but I'm sorry to the OP because again I only C & Ped.

    Chickpea Fritters

    Mix 1 egg, 4 oz SR flour, 1 tbsp soy sauce and 1/4 pint water to make a thickish pancake batter.
    Drain chickpeas (if canned or rinse after cooking if dried) and either add to the batter and shallow fry (which will make lumpier fritters) or blitz batter and chickpeas in the food processor and shallow fry for smoother ones.

    OP said that they served theirs with HM sweet and sour sauce with veg or salad. Their DS added crated cheese.

    I noticed there was no mention of seasoning - not sure if that was because of the soy sauce.


    In the recipe collection section it does have some recipes for chickpeas (which is probably where I found these) and I notice some sauces for pasta etc. Might be worth a nose in there ISOM.
    Not sure that they had a millet section tho. :D

    You can cook millet seeds with twice as much water for abut 20 mins and use as an alternative to rice, cous cous etc. I think it's good for putting iron in your diet.

    My favourite way is to saute an onion in a saucepan, stir in half a cup per person of millet, add twice as much water or stock and a little salt, clamp the lid on and simmer for twenty minutes. All the water should be absorbed.

    Cold cooked millet can also be used in a salad.

    Thanks for that nopot2pin - that looks really delicious.
    Having a quick look in the supermarket it would seem that chickpeas are great value at the moment so I think these recipes are going to be useful over the next few weeks for me. :D

    Not sure of the nutritional value of chickpeas but I'm hoping they contain protein like other pulses. Must get more up on this sort of thing. :rolleyes:

    Today we are having toad in the hole with reduced sausages from Morrisons and veg from the garden. Am considering making some HM sage and onion to go with it using some of my dried onions and some breadcrumbs that I froze.

    Shall also make a moussaka ready for tomorrow (mum coming for day and it makes it hard to cook while she's here). I've a massive aubergine that I got for 10p from Tescos the other evening and a courgette from mum's garden, so that will all go in. Cheese was reduced to 24p (:eek:) from Tescos too so only the mince was a dear do.

    Just got to make a treat for today as I promised DS2. Shall make a maderia with some of the butter popped in the freezer when Asda was doing their 50p deal and later make a bread and butter pud for round the telly tonight.

    Looks like I'm sorted then. How's things going with your cupboard challenge:D ISOM and Fading?

  • in haste as much to do! Not much cooking done but did banana cake x 2 for me and to thank neighbor who hung cupboard...found a recipe for millet bread so will have a bash with that and report back.Seakay what do you have the millet recipe with? ie is it just on its own?
    Pretty good with food budget - only about 3 last 3 weeks but will need milk, eggs and butter...this week..
