  • afternoon all...tonights pizza for the helpers is rising as I type!! May have a lodger who wants to move in thurs so all hands on deck to clear space for her!! Shall we say that we'll all try and do a stocktake over the w/end and start n earnest next week? Would really like the storecupboard curry recipe pretty please!! Off to put things back in what is now my room!

    Would really like the storecupboard curry recipe pretty please!!

    I was using up a jar of Pataks paste... Rogan Josh... I used about a large tablespoon full.
    And in the fridge... a big handful of mushrooms and 3 onions.
    From the garden..... a small butternut squash.
    From the freezer... Peas... 2 handfuls.
    And from the cupboard... a tin of tomatoes..... half a tin of coconut milk... and a tin of tikka masala chickpeas... when they were on offer.... the sauce was a little too tomatoey... so I left that out, and added the chickpeas.

    That lot made 3 decent portions - 2 went in the freezer :D

    Last night I used up some dried soya mince... a tin of carrots, and a few onions... Veggie mince :drool: (2 left over for the freezer)
    I had that with a HM yorkshire pud :cool:
    And I used up the rest of the coconut milk, by making a chocolate custard for pudding :D

    Tonight, I made a red pepper lasagne. Using peppers from the garden.... and a tub of cottage cheese for the cheese sauce :T .. so its actually quite low in fat too (and you guessed... 3 portions went in the freezer)

    I like to have a few different things in the freezer, as it helps me, when I am working a lateshift, and have to take a ready type meal to work :o:cool:

    Not sure what to do for tomorrow... as running out of fresh veg. But want to keep going for a few more days before going to the shops.

  • well done nopot! Managed a pretty frugal dinner for four - pizza and al done incl other food shop came in under 4! Lodger definately moving in on thurs so all hands on deck here!

    Well folks, courtesty of ISOM and Reader's Digest, here is the recipe I used. My yeast is rather old so that may be why it came out rather dense. DD didn't like it but I know I'll love it (when I'm not doing LL diet *sigh*) so after the 2 slices for her sarnies, the rest has now gone in the freezer to be used up in something else....it looks and smells gorgeous. Enjoy :)
    Quick wholemeal bread (Readers digest recipe)
    (makes loaf – approx 14 slice)

    450g/1 Ibs strong wholemeal bread flour
    1 tsp salt
    2 tsp easy blend dried yeast
    1 tsp light mucadavo sugar or clear honey
    450ml/15fl oz tepid water
    1 tsp plain white four to dust
    * 2 -3 tablespoons sunflower seeds if you want extra nuttiness!

    Lighty grease 2ib loaf tin and set aside while making bread.
    Sift flour salt & yeast into large bowl – tipping any extra unseived bran in and make a well in the centre.
    Stir honey or sugar into tepid water and then add this mix to the flour. I mix it in with my hand (take any rngs off first or it gets everywhere!!) for approx 2 mins until it comes away from the sides adding a bit of flour if its too sticky but it should be quite sticky anyway! *At this stage add sunflower seeds etc if you want to!
    Put dough into the tin & cover for approx 30 mins – should rise to top of tin.
    Sprinkle white flour on top for effect (I often forget & it still looks good!)
    Preheat oven to 200C/400F/GM 6
    Place tin in oven & cook for 30-40 mins – should tap hollow when done. You can return this to the oven for 5 mins if you want crispy sides! Place on baking rack & cool with cloth over it! Eat & enjoy! It really is easy peasy lemon squeezy & has a nice texture!

    Righteo! Can't wait to get started but being as I'm a slow coach I'll do my stock take over the next couple of days so that I've a chance to think what I'll need to add in the weekend shop to make real meals.

    I'm aiming for practically zilch shopping but I know I would love some mixed herbs to 'tweak' things a bit.

    If anyone has any ingredients that they have stock piled and need help finding ideas for maybe we could list them and get inspiration. Guess why I suggested that? :o

    Mine from memory are:

    Black treacle ( tins of the stuff and I know its iron rich so must use)
    Dried onions (used in naans/ bread so far. Have about 12 boxes :rolleyes:)
    Black bean sauce (6 jars)
    Mincemeat (16 jars - makes lovely fruit cake but other ideas?)

    Will add others as I think of them. Would love to 'play' with others lists, too. :p

    Oh and I have some filo pastry that has been lurking in the freezer for a bit but I've not known how to use it. Just thought it might be the same texture as pancake/spring rolls. Ideas anyone?

    ISOM - I'm really pleased that you've got your lodger sorted speedily. I'm not sure what your situation is but gather its drastic action that was needed and really admire how well you're coping - even if its draining you. Well done you! :T

    I am still here have had a self imposed storecupboard challenge last week in order to defrost the chest freezer down in the shed (all done now just waiting for it to cool down before refilling and doing the kitchen one)

    Hoping to get a side of beef and half a lamb soon to fill it up

    pleased to hear about the flatmate ISOM and hope your not too lonely without the cats

  • A bit of a 'use-up' dinner for me tonight:

    ~ Mini quiche (bases 6 for 39p at Heron) with leftover broccoli and leeks, bit of cheese and egg from the lady at work = less than 30p?
    ~ Roasted veg - contents of the veg drawer in the fridge! A lot of stuff I would usually have chucked :eek: = considering it free :D
    ~ 2x potato waffles = 15p

    I'm also going to make some muffins - plain ones with lots of spices and dried fruit (seriously, I have enough dried fruit to last a year!). Yum :T
  • cheerfullnes4 - send the mincemeat to me! :rotfl: or make a tart with the filo pastry :) Filo pastry also works great for samosas/spring rolls.

    For samosas dice up some potato/carrot finely, parboil, then mash slightly and stir in plenty of indian spices to your taste, plus peas. Cut a strip from the pastry, dollop in the veg mix, and then fold up from side to side to make a triangle. You can oven bake these :)

    That sounds delicious, lightisfading - must give that a go. Even better if I can oven bake rather than deep fry.

    I've got all that mincemeat because Asda were selling them off a bit again at 30p a jar. Poor DH was scrambling round on the floor as they put them right out of the way were no one could see. Each week I was buying more. Can't resist a bargain. :dance:
