    I know I haven't posted in ages but I do read and when I saw Nopot2pin mention lemon curd ice cream I wanted to offer my version.. It may not be what you want but here goes anyway!

    Serves 4-6

    This tastes slightly tangy, and it's really nice with fresh blackberries.

    10floz/300ml whipping cream
    4floz/110ml Greek yoghurt
    1 lemon, zest and juice
    4oz/110g lemon curd
    3 large meringues
    • In a large bowl, whip the cream until thick but not stiff. Fold in the yoghurt with a spatula. Mix the lemon zest, juice and lemon curd. Gently fold the lemony mixture into cream.
    • Break the meringues into pieces (make sure some of the pieces stay quite large. They’ll break more when scooped).
    • Fold them into the cream. Scrape the mixture into a plastic freezerproof container.
    • Cover and freeze for 4-6hours or until solid. Remove from the freezer just before serving. It is reallllly nice!
    If this isn't suitable then I found this one on the site which is basically lemon curd and cream so is much easier and looks just as delicious. LINK

    i've made that too and i agree it's lovely! even my daughter liked it and she's at that somewhat finicky stage (nearly 8) so for anyone that's been considering making it, go for it! :T

    I seriously need to do some stocktaking and use up those bits that have been lurking at the back of the cupboards hiding.
    Aiming to have very low spending grocerywise for the next few weeks as we've MOT's on both the cars to get through - and our cars aren't very new either. Have a bad feeling. :rolleyes:

    I've some weird bits and bobs in my cupboards too and masses of black treacle to use up and black bean sauce - all stock piled when on offer. :o

    Hello again, thanks for the bread making tip ISOM - I also found one that I used to use many years ago ... will try it out again & if it's any good will share.

    I've done my shopping for the week & spent just over £30 :( but today went to the allotment & gathered a bag full of veg. We've just had bowls of lovely veg soup for tea. Onions, garlic, leeks, potatoes & carrots all thrown in the pot with some stock. Yummy & even DD ate it all, must go make another batch of Twinks hobnobs now ... :)
  • great that I'm not alone in my wee challenge! todays challenge has been carboot, emptying sitting room ready for carpet fitting tomorrow and replying to people wanting room to rent...can honestly say I havent ever felt this tired! Off to bed in a mo...thankful that I have wonderful, thoughtful friends who astound me with their thoughtfullness and generosity...

    Hi ISOM, hope you have a relaxing sleep. I need to get to my bed soonish as I'm a tad hungover after a rare and fantastic night out last night :)

    Just wanted to say thank you as I'm just about to pop in a loaf of easy wholemeal bread made from a recipe you posted on Obi's diary way back in the mists of time, and it looks and smells gorgeous even raw! Hope DD likes it as it's going to be making her packed lunch tomorrow......

    Hope your current troubles are short-lived and you get yourself back on an even keel very soon.
  • oo let me know how it goes...it also comes in white! While times difficult and I'm exhausted I can honestly say that I've never felt so loved and supported and thats cant be a bad thing can it!

    Link please :D [I'm afraid I don't stray very far from the OS board so these strange & wonderful lands of which you speak are of a mystery to me :p] I have a breadmaker but suddenly thought I'd be a bit stuck if the power should go....
    I'm supporting your cause ISOM! I used up the last of the yellow split peas yesterday & won't be getting them again as we are not keen on either the taste or texture. Plus 2L of longlife milk went into a rice pud & the white sauce for the lasagne, that was possibly a tad past the date :whistle: But the two-&-a-Pup who had the pud yesterday seem fine & we've the lasagne for tonight, so keep your fingers X I'll be here tomorrow :o & not getting too closely acquainted with my bathroom _pale_
    The offspring caught me prepping the yellow split peas & pinto beans, so I had a flash of inspiration & blitzed them--once cooked--with some raw carrot to make a paste. That got stirred into the beef mince to help make five portions each of a rather handsome meatloaf & the lasagne, & no-one could moan about the lumpy bits because there were none :T
    I have been a 'throw some of this in' type cook, but shall have to start weighing things for a new eating regime No2 & I have begun :mad: & fear I am going to lose the enthusiasm to cook at all if I have to faff around with each little bit, but seeing as this is a medical referral there is very little option. Yes, I AM grossly over-weight, but primarily I am on this course to support No2 who may have to have surgery & they won't contemplate the idea without any kind of weight-loss; it also makes sense as I do 99.99999% of the cooking :p If nothing else, I'll have proper figures ready for the Queen of Geek to play with, whenever she fancies a break from baby-brain ;) I so remember those times when the highlight of my day was discussing appropriate teething foods

  • afternoon all...tonights pizza for the helpers is rising as I type!! May have a lodger who wants to move in thurs so all hands on deck to clear space for her!! Shall we say that we'll all try and do a stocktake over the w/end and start n earnest next week? Would really like the storecupboard curry recipe pretty please!! Off to put things back in what is now my room!
