Courgette cake - good idea! I tried one out of Nigella's baking book a couple of years ago, but not done one since.

courgette bread or zucchinni bread as it's called in the states (i've probably mispelled zucchini!) is tasty and can be made very much like banana bread but use courgette in it's place. if you search google you'll find plenty of recipes and you don't have to make the icing that often comes with the recipes though it is scrummy!0 -
I am really envious of all of you with produce flowing from your gardens. I was late getting things out this year and I am just beginning to see the tinies beans and courgettes appear. I have another 6 cabbages and a couple of lettuce to eat soon so its not all bad.
My blackcurrants are ready for picking and after toping and tailing last week my fingers seized up! mornig all...just popping into say hi! Only 6 days till meet!! Am ok but wil be nervous on the day...remember when I met the weezles that I was cacking myself!! This time I get to walk in with weezl. Not much cooking going on here as trying to eat freezer down a bit! Possibly some pork chops later!Nerd no 109 Long haulers supporters DFW #1! After a similar experience with blackcurrants I decided not to bother when making a little blackcurrant jam with some fruit from a friend's allotment earlier this year - it was absolutely fine so i won't be bothering with top and tailing again!
Apart from that there is blackcurrant jelly.0 -
Shaz - I've been nosing at your blog and am incredibly jealous - I want pretty raised beds *cry* :P anyway.. I tried the courgette cake recipe (the non-chocolate one) and it was yum, so thank you very much :T (one courgette down, 4 to go! :rolleyes: )
For any that are worried about it being rejected by picky kids etc - it just tastes like a cross between a light fruit cake and carrot cake, so make it and serve it up and such and nobody will be any the wiserI used yellow courgette from the garden, and it was invisible, I don't know if green shows?

poohbear what about crumbles or pies. For crumbles, I use 25g per person of flour, sugar, oats and fat. Then I add sesame seeds and pumpkin seeds, and change the type of flour and sugar sometimes to go with the fruit. With blackcurrants having quite a strong flavour, I think I would probably mix them with apples for pies and crumbles. Are they an ingredient in summer pudding? Had a quick look at the Good Food site. They had Forest Fruits Clafoutis which would need to be frugalised if you want to minimise your spend, Blackcurrant Ripple Ice Cream, Blackcurrant & Mint Sorbet or Blackcurrant Jelly. Cor, wish I'd got some now!
Shaz We had this (coincidentally) for dinner this evening - Courgette Fritters with Tomato & Feta Salsa. It is from the July 2005 issue of Olive, I had a look at the Olive site, but couldn't find the recipe, then saw that it is a BBC magazine, so had a look at the Good Food site, where I found it. It was very yummy. I made half the fritter mix for the 2 of us and it made 6 generous fritters. I made the whole recipe for the tomato and feta salsa and put lemon zest strips in instead of juice. A delicious combination of a recipe and something I will def be doing again. For half the recipe, I used one medium fresh courgette from the garden, and one largish one that had got a bit soft from the fridge.

Lesley thanks for the ideas. I have made a pie and apart from being a tad sharp my family have really enjoyed it. I am going to make some crumbles next and freeze them for when we have no fresh fruit left. aww elfinwings i'm sorry to hear you're laid up with swine flu! can't be a nice feeling and i'm hoping your neighbours aren't treating you like you've got the plague!
i suppose at least you'll know you're not likely to get it this winter when they are expecting it to get really bad so there's a little something in that at least!
i'd recommend kicking back, sleeping as much as you can and plenty of lying around watching carp telly. it's a shame you'll miss the meetup, i'm sure everyone here wishes you the best and a speedy recovery0
