    Hi! I love this thread, read all the time, hope you don't mind me posting.

    Mmmm, mushrooms!

    If you are going low fat I would say a mushroom risotto, as you will get enough flavour out of the mushies without the need for excess butter.

    I like garlic mushrooms, mixed with pesto and pasta, and maybe some roasted tomatoes/cherry tomatoes too!

    Or maybe a rich tomato and mushroom sauce. I am getting hungry now!

    One of my favourite recipes for mushrooms is from the Cranks book, Mushroom Stroganoff. You fry off celery and onion with the mushroooms, then when they are done, add some half fat creme fraiche. I can post the full recipe if you would like it.

    The Stroganoff can be used with rice, mashed potato, as a jacket potato topping or with polenta, or of course, anything else you fancy.

  • I'm on Weight Watchers and made 0 point mushroom soup the other day - easy peasy, looks DISGUSTING, but tastes delicious! Fry an onion in Fry Light or Olive Oil, add some chopped garlic and the sliced mushrooms, add salt and black pepper (I put loads in! and also some chilli flakes but thats optional). Cover with chicken stock (made from stock cube in my case) and simmer for around 20 mins. Liquidise with hand blender and serve. You could add cream or creme fraiche if you want - but I wanted it to be 0 point.

    Alternatives; mushroom stirfry, mushrooms on toast, mushroom carbonara, mushroom pate - you've got LOADS of yummy options!

    Lovely to see all the dehydrator posts its on my to get list along with a pressure canner and a manual mincer/sausage maker and a wheat grinder.........

    Weezl and ISOM i am so looking forward to our meet feels like a blind date where you already know you have something in common

    Apple cake recipe wasn't me i am afraid

    preparing for the trip on saturday and downloading directions to campsite just crossing everything that wales isn't always as wet as i remember!!

    Spent last week watching coal house at war i love the historical re-enactment shows and would love to take part in one. This series and the original coal house are a great watch if you can get them and we plant to visit the site when we are in wales

    Lots of garden jobs to catch up on before we leave so probably not be about much

    ISOM i have been lurking over on the shabby chic thread your quilt is lovely

    hello all...tis I...skiver who has taken 1/2 day to catch up on housework cos it was getting o top of me after yesterdays feeling cack with sinuses....I keep telling weezl she would never be dull but she doesent believe me...think dear readers that she finds it hard that we love her geekyness but we do dont we! I mean where would I be without my mate to check out whether cat food cheaper in asda or costco IN HER HEAD?! The answer btw is asda BUT the costco stuff is much better for them. Mum hadnt seen the cats for a while and commented how gorgeous their coats were looking....Poppy cat is black and literally shining!

    Watching Daily cooks challenge, Bit naughty of me, but they have to do a meal on £1.25. (Its one portion of a meal?) They need some advice off of his site!. We try to cost things for the whole day!!!(Well most on here do, I struggle to do it!)

    I really did, I'd love to have another go - after one weekend you're not really set up to go it alone as it were, and try making a basket on your own though. Would love to do the Improvers course, but I fear it will have to wait until we have some spare funds for such extravagances icon9.gif The beginners course was a Christmas gift, and possibly one of the best presents I have ever had!

    Hello Tryingtoruletheworld, delighted to meet you, and thank you for posting these excellent suggestions - I will definitely go for the risotto idea. Might try making up a big batch and freezing some - I eally do have a LOT of mushrooms to get through!
