    I have the River Cottage Preserves book and it says not to bother with soaking the pips. It was believed they contain lots of pectin, but there's far more in the peel and that's enough to set the marmalade.

    I really want to make it too, forgot to check the veg shop this morning!

    Yes, use a tin!! LOL :D

    I did make it once, but got very bored cutting all the "marms" up. I am afraid I use a tin of Ma - made, it's a doddle.

    A second for Mamade, they also do lemon

    Have seen Seville oranges in local greengrocer

    Yep, Seville Orange are about... Made my first batch of marmalade on Saturday and it is delicious. I used Vivien Lloyd's recipe from here. She is a lovely lady and she's on Twitter too. Really helped me when I had a couple of questions :)

    Anyway, a few pics for you :)

    If you freeze fruit and then defrost it it's much easier to chop up.

    Or use a pressure cooker as morganlefay suggests (although I'd put the pips and flesh into a jelly bag or piece of muslin to save straining)

    the waitrose site has an interesting recipe where you can add rosemary or bay leaves to flavour your marmalade

    If you are planning to make marmalade over the next few weeks while Seville oranges are still available, start saving all the peel from your oranges, satsumas, lemons and grapefruits in a bag in the fridge instead of putting them into your compost bin.
    You can then chop them up and include with your Seville orange chopped skins to make an extra chunky luxurious marmalade for no additional cost.

    Does anybody have any tips for short cuts to making good quality marmalade, apart from buying the concentrate kits in cans?

    I have made next to nothing cost marmalade. I bought two litres of grapefruit juice which were reduced to 11p each.
    Saved the orange peel from several oranges and the peelings and cores from apples that I had made into a batch of crumbles.
    Cooked the peel and peelings in the grapefruit juice, until the orange peel was soft. Removed the softened orange peel and removed the pith and sliced up the peel to how my sister in law likes it.
    Strained the grapefruit juice and used that with sugar ... pint of juice to a pound of sugar... Boiled up with the shredded peel and put into jars.
    Hey presto ... Grapefruit and orange marmalade ...

    Got my Sevilles from Waitrose this morning, the organic ones are on offer at £1.71 for a Kilo box, which is cheaper than the loose ones they has next to them:huh: First time making marmalade after girlfriend suggested it, !!! her dad used to make it and she loved the smell of it cooking.

    I feel quite daft asking this but can you use any orange to make marmalade?

    I've hunted high and low for some Seville ones and it seems you cannot get them over here, and I'd love to make some for my other half, especially as he's recently pointed out he loves the stuff and doesn't buy it because a) we always have homemade jam in or b) its too expensive!

    Also if you can use any orange does anyone have any tips on the best ones to use? As this will be my first time trying I'd love to make it extra yummy.
