Just a quick question - I know this will probably be moved eventually.
I've made some lime marmalade today, and envisaged something pale green a la Roses, but it's not that colour at all. Is this right? Presumably factory made marmalade has colour added to it to make it look attractive?0 -
Much of the colour of marmalade comes from caramelisation of the fruit skin as the peel boils with the sugar and there's little lime peel in lime marmalade ompared with for example Seville orange marmalade. You didn't! Do anything wrong. Don't know if Roses actually add any colouring to the commercial marmalade - check the label next time you're in a supermarket. If you want to add some colouring powder to it simply for cosmetic reasons and appearance be very careful because even a mere pinch of it will go a very long way.. It's very powerful stuff!0

Just checked on-line - they add chlorophyll to it. Mine tastes very nice (if I do say so myself) I've got a couple of limes left and some lemons, so I've prepped the fruit to make some lemon and lime marmalade tomorrow. I think I've still got enough orange marmalade left over from last year, so I'll keep my seville oranges in the freezer for a bit longer.

i have googled this and its mainly us sites with all kinds of strange things in. i just want a 'normal' recipie i can use in a bread maker. i have gf flour and xantham gum which i belive is needed . would like to just use normal flour and not rice flour if i can. thanks0

I'm itching to make marmalade - has anyone seen Seville oranges in the shops yet? I might just crack at the weekend and make some three fruit marmalade as I'm on the last of my summer jam already! Does anyone have any sure-fire tips?0

Yes they are in the shops!! My mum saw them at the greengrocers yesterday!

waitrose had seville oranges in at the weekend in going to get some later in the week...lovelyonwards and upwards0
