Does anyone buy frozen mince...

Yes and it will be delicious - have made it loads for people who won't eat beef.
The colour can be a little paler than beef. You can get around this by addidng 6 squares dark chocolate per lb of mince. Also gives a delicious richness to the flavour.....0 -
I love lamb mince, but that's probably because lamb is my favourite meat. It will make a lovely chilli, but remember that lamb tends to be fattier than beef. What I do when cooking lamb mince is to brown the meat and drain off some of the excess fat before adding any other ingredients. It will be fine to freeze once it's cooked.

Also, lamb curry is another yummy one to make, as well as the usual shepherds pie and bolognase (when i lived at home my brother wouldn't eat beef). What's he building in there???

I add a few drops of gravy browning to get a nice brown colour, much better for the waistline than horrible, fatty chocolate!!!
Something else I "discovered" by accident is that when browning mince (any mince) it sometimes won't break up into nice little bits and stops as clumps or strings of meat -IYKWIM. This can be stopped by using a pan that is too small for the job, so you have to stir it against itself and thus it breaks down into ikkle bits a lot faster. I then use a sieve and tattie masher to remove a lot of the fat.
HTHThe quicker you fall behind, the longer you have to catch up...0 -
I use 70% cocoa, organic chocolate and 6 pieces is approx 30g, divided by 6 portions. So neither horrible nor fatty!!! Neither is my chilli....;)
Best flavour will be achieved by using the leanest mince you can afford. When you drain off the fat, you also drain off meat juices - best to buy mince made of a lean cut of meat in the first place - your butcher will be able to advise you.0 -
How long can you freeze it for? I want to take advantage of the 2 for £3.50 in Tesco at the moment. Already have 4 packets in the freezer with each packet divided into two, but want more!Pink Sproglettes born 2008 and 2010

It should last about 3 months in the deep freeze. Always remember that you can cook it into a sauce/whatever and then refreeze the food you've made for another month or so.
I could make it better myself at home. All I need is a small aubergine...
I moved to Liverpool for a better life.

I try to use it up within about 2 months as I've found it gradually loses its flavour if kept too long. I once made a spag bol with some mince that had been in the freezer about 6 months and it had no flavour at all. But as dronid says, you can cook it and then re-freeze it.0
