The reason why I would have more than one browser open for booking, is if I were processing bookings with different details. i.e. names, dates and/or locations and needed to be able to confirm both at the same time. e.g. to ensure that I could obtain the correct connecting flights before confirming one or the other.
Trying to do it on a single browser whilst utilising the same website could result in a nasty shock.

The exact same could be said about using 2 windows as some sites only recognised the cached pages and what you may have entered on one actually comes out on the other window at checkout.
