    I always look for pork joints with plenty of fat when I make sausages. You need about 15-20% fat to go in the sausage (along with other flavourings, rusk and water). If you're interested a great place to learn more is HERE

    Delia does an amazing pork with cider which uses pork shoulder and it's really tender and delicious.

    The fat disappears into the sauce but if it bothers you, you can leave it in the fridge overnight and skim off the fat in the morning.

    One of my favourite specials that Morrisons run frequently is pork shoulder at £2 / kg.
    Wondering if anyone can suggest some good things to do with it....
    So far I've used it to make pork and apple casserole, carnitas pork (for burritos) and and Italian stuffed pork that I got from Nigella but I'd love some more ideas.
    Particularly anything that freezes well!

    This is lovely. With any left overs - we have done sweet and sour pork with rice for the next day.

    Hi There

    I realise someone has already done pork shoulder recipes with a Jamie Oliver link.

    There was a great moroccan style recipe for shoulder on the Jamie does Marrakkech on Channel 4 a week ago - its a roasted shoulder joint with a spicy rub.

    Its worth watching again - as the technique was simple but the exact recipe escapes me.

    I've just finished a bowl of Asian Pork over rice. It is gorgeous; one of the most tastiest meals I've made in the slow cooker. Can't see any reason why you couldn't do this in the oven on slow though.

    Real Simple's Sweet & Spicy Asian Pork Shoulder

    Having made a batch with pork, and frozen two thirds of it, I had another go with beef and that was fantastic too.

    We've just finished the last batch from the freezer tonight and the OH is asking when I'll be making the next batch ;-)

    I love making bbq pork quesadilla's

    Ingredients:

    • pork shoulder roast, about 4 pounds
    • 2 medium onions, thinly sliced
    • 1 1/2 cups water
    • 1 bottle (16 ounces) barbecue sauce, or 2 cups homemade sauce
    • 1 cup chopped onion
    Preparation:

    Place half of the thinly sliced onions in bottom of slow cooker; add pork and water, along with remaining onion slices. Cover and cook on LOW for 8 to 10 hours or 4 to 5 hours on HIGH heat setting. Drain liquid from slow cooker; chop the meat coarsely and discard excess fat. Put the pork back in the slow cooker. Add barbecue sauce and chopped onion. Cover and cook on LOW for 4 to 6 hours longer. Stir occasionally. Serve with warm split buns and coleslaw.

    I will then make quesadilla's with it.

    If there are left overs i freeze it for another day :)
