i did eat it and it was lovely yumm i just cooked it. I now have a pork belly in the oven just browned the top to get some cracling. It's from our own piggie and she is lovely and lean, no chemicals and the butcher already scored the skin for me!I have dyslexia, so get used to my spelling and grammarMortgage pay off date 11/2028. What can i do with it apart from a roast dinner! Me, hubby and 3 kids would love someone to help us to find a recipe to feed us all and not be roast again! (bought a few of these as cheap in tesco!!) - the joint says feeds 8DFW since JAN 2009 - 2014 will be the year i finally clear debts

I got a fantastic bargain from Sainsbury's today - a 1.8 kg pork shoulder joint for £3.24! It was half price anyway, and this one was reduced further cos the use by date is today. It's blown my grocery budget but it was such a bargain I couldn't resist (got 6 Taste the Difference sausages for £1.59 too).
Anyway, I need some advice on what to do with the pork. I live on my own and the only other person I would feed with it is my boyfriend, so I don't want to roast it whole. I plan to cut it up and stick it in the freezer but I'm not sure what size to cut it into - I was thinking to cut off some of it to roast as a joint (how much for 2 people with some left over?) and the rest cut into portions/cubes for other recipes - would this work with this cut of meat? I'm not very experienced with meat and I've never owned such a huge piece of pork, so any advice would be great! Thanks.April Grocery Challenge: £80/£64.39

I live alone too and do this a lot as it is often cheaper to buy bigger cuts (especially if the date is close - that was a total bargain!) Personally I'd cut it into at least 4 and then roast each one and use what's left for a second (and maybe third) leftover meal. Don't forget that if you roast it, you can re-freeze it cooked then defrost and use in stirfry or curry or some such.0

That's very helpful, thanks. I did find a thread with what to do with leftover roast pork and there were some lovely ideas on there. So I take it that roasting is the best thing to do with this cut? There is a lot of fat on it, and I was hoping I could cut this off and use the pork in other ways (e.g. cubed for casseroles etc).

I would have no hesitation about raosting it whole even for two people. Leftovers make fab sandwiches and are good for another 4-5 days or can be frozen.
Cook it slowly like this and you won't regret it;)0 -

i'd cut off a couple of roasts (600g each) and cube the rest of casseroles etc - a portion size for meat should be around 100-150g per person to give you a rough idea of how many meals you might get from itPeople seem not to see that their opinion of the world is also a confession of character.
