    Thanks Rach. I did just cut it into 2 in the end, because there was a lot of fat on it and I thought it would probably shrink when it was cooked. It's now thawing and I'm going to do Jamie's roast recipe for me and my boyfriend tonight, yum! Better go and get started actually or we'll be eating at midnight!

    I cooked this yesterday and you're right, I certainly didn't regret it! Best roast dinner I've ever made - the pork was lovely and tender, the crackling was crispy and the roast potatoes were soft and fluffy inside and crispy on the outside. The best bit was that since it was just me and my boyfriend, we did all the things our parents wouldn't let us do when we lived at home, like pinching bits of the crackling off the joint before we'd put the food out! Admittedly it was quite fattening but we didn't need much, so there is plenty left over. I'll probably put a bit of everything in a plastic carton for the freezer, and browse through the 'leftover pork' thread for ideas. :j

    Got a tray of pork shoulder in Costco and was looking for the best way to cook it ? :D

    Pork shoulder is one of the joints best suited to slow cooking, so I'd go for slow roasting or pot roasting it. I can't recommend a specific recipe as I've only cooked with this joint once and it wasn't particularly good (it was the recipe at fault, not the pork shoulder, so don't worry!).

    I would like to try again so I'll be keeping an eye on this thread to see what other people suggest.

    i just chuck it in the slow cooker, throw in garlic, quatered onions, thyme and a pint of stock (chicken pork or veg)

    cook on low for 6-10 hours

    then i brush it with honey and mustard, sprinkle with salt and put it in a hot oven for 30 mins. pull apart with a fork to serve

    this is OH's faveourite dinner

    As others have said slow roasting is the best way to cook pork shoulder. There's an earlier thread with recipes and advice that should help so I've added your thread to it to keep the suggestions together.

    i had a joint of pork shoulder and saved half, however it was practically unedible it was full of fat and horrible to chew on, is it best to just throw it away or have any of you ladies got any other ideas??

    could you render it down and use the fat to top off HM meat paste? or slice thiny ,fry till crispy and eat a little with boiled cabbage and mashed potatoes,all mixed together.

  • You could try making Somerset Pork with it, get the Colmans sauce mix and just make sure you pad it out with lots of onions and apples. As long as you skim the top of it it should be fine and because it's bubbling in the sauce for 50 minutes it should make it less tough.
