What is a decent alternative for fresh garlic?

We like to have a jar of 'lazy garlic' in the cupboard for using in our cooking! :cool:we are sick of buying the little jars because they dont last us long.:rolleyes: (we sometimes buy big jars from Macro)
Anyway last weekend I bought a long string of garlic and this morning I have peeled/chopped it and put it into jars with white wine vinegar some of it I have chopped more finely than the rest and put in with olive oil for garlic bread!!:T:rotfl::j0 -
Thats not very lazy anymore. Do you mean energetic garlic?0

My Indian neighbour chops her garlic very finely then freezes it in sheets and stores it in plastic bags in the freezer. She also does the same with coriander and chillies. When she needs to use it she just snaps a piece and uses it as if it was fresh produce.
I know because she gave me some of these when I knocked at her door and asked her to borrow some garlic. Very good flavour and very practical thing to do IMHO. (still keep meaning to do the same and eventually I shall get around to emulate!).

Garlic puree in tubes keeps very well and is really handy.0

Our local Indian supermarket sells frozen garlic either minced or in whole cloves at a really good price. It's far cheaper than buying it in jars or even fresh and mincing my own (which I used to do before).
It contains nothing but garlic either which is important to me, no nasty preservatives etc.0 -

OP has used vinegar as well. But good to point it out incase somebody skips that bit.
So long as its an acid environment then it will be safe.0 -
so your house is now a vampire-free zone?? sorry, couldnt resist - but i thank you from the bottom of my heart hun!!!! i buy fresh garlic but always end up throwing at least half of it away - have some little jars and will now make full use of your idea and stop wasting garlic!!!0
