    I've been making a veg chilli for years as much cheaper than a beef one and I'm not even a veggiei! I love the fact that meat eaters have NEVER guessed there is no beef in it! This keeps well and also freezes without any problem, infact it tastes better if not eaten on the day! I normally make a huge pan, so I'm guessing the quantities - tasting and adjusting is a must!
    Ingredients
    1/2 pack of dried soya mince (packets available from Health food stores)
    4 peppers cut into chunks (I use green & yellow for extra colour)
    1 punnet mushrooms cut into chunks
    1 large onlion chopped
    2 tins of chilli beans (kidney beans in chilli sauce as this adds to the flavour. I get mine from Asda & as the tins are quite small I would probably add 3!)
    2 tins of chopped tomato's
    1 small tin of Tomato puree (Have a tube handy to add extra if needed)
    1/2 tsp cayenne pepper (add more if you like it hotter!)
    1 tsp paprika
    1 tsp sugar
    1 tablespoon vinegar
    To Make:
    Put soya mince in a large bowl and add enough boiling water to rehydrate
    Fry onions & peppers for a couple of mins then add mushrooms for another couple of mins
    Add soya mince, tinned toms and tinned chilli beans to pan & mix together well
    In a dish put tom puree, vinegar, cayenne pepper, parprika & sugar & mix together, add this to pan & stir well
    Leave for approx 1/2 hour, stirring occasionally
    adjust taste, this might mean adding more spices or more toms.
    My sauce is quite thick (red looking) & rich with tomatoes with a hint of chilli heat.
    I usually leave mine on a low heat for about 1 1/2 hours to make the flavours mix together but I also prefer to eat it the following day (or days) when the soya mince has soaked up all the flavours!

  • I think your best bet is to batch cook one sunday and then every day its just a case of zapping in the microwave? I do this with my son (i.e. I will cook the pasta when I get home but microwave the spag bol from the freezer.....)
