I got my online shopping delivered last night, and once I'd unpacked it, realised that I'd got so much fresh ginger it was unbelieveable!!
I'd ordered (and been charged for) a small piece, but someone has picked me a piece larger than my hand!
What can I do with it?? Can it be frozen etc?0 -

You can just throw it in a bag in the freezer as it is -and then just grate off what you need as and when...-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
I'd peel it before freezing;)0

If peeling it, the best way I've found is with a teaspoon.
Basically, scrape the teapsoon back towards you and the skin will come off really easily. Then into a bag and into the freezer.0 -
You can peel it -but there is no real need if it is really fresh and young when you get it as the skin is so thin it can be left on and eaten-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50

I wouldnt bother peeling it, it does go a bit pappy in the freezer so the skin will keep it in tact0

I bung my ginger in a food processor, mix in a little oil and then blitz it up bung it in a jar in the fridge and just scoop out however much I need when I'm cooking - I do this with chillis and garlic to...so much quicker than chopping it up when you need it...

You can keep it in the fridge for weeks (mine's in a compartment in the door).
I'll add this to the existing thread on root ginger to give you more ideas
