  • Stick it in the freezer.

    You only need a tiny grating for most recipes, even ginger tea only needs a 2p coin thickness of slice.

    Peel it then chop it into thumb size pieces before freezing (most recipes call for a "thumb" sided piece of ginger for some reason)

    You can then take them out as you need them and grate with a fine grater before using. Keeps for months and months like this.

  • Grate the ginger with some garlic and add olive oil to cover. It's great added to some chopped tomatoes as a sauce for pasta. I've also added tuna to the tomato mix to make a more substantial sauce. it keeps for quite a while in the fridge in a container.

    I'm another advocate for freezing - have you never heard of ginger on demand? Hope you didn't pay over the odds for it though.
