It lasts for ages in the fridge and freezer, so you could chop a few bits up and pop in the freezer, or grate some in with prepped stir fry veg for the freezer.
You can make ginger tea by adding a tiny bit of grated ginger or a 1cm cube to a cup of boiling water, letting it cool, then zap back to hot in the microwave. Really yummy and zingy and good for migraines, it was a total god send when I was getting migraines in the summer.Living cheap in central London :rotfl:0 -
I whizz it up, unpeeled in the FP. Then keep some in a screw-top galss jar in the fridge with a wee bit of oil on top. Keeps easily for 2 months like this. The rest of the whizzed up or grated ginger goes into ice-cube trays in the freezer and then into a bag. I found this recipe online
To make 5 Gallons of ALCOHOLIC ginger beer. Use 1.5 Lbs of Ginger root. 4 Kg's of sugar. 4 or 5 Lemons. Boil and simmer all ingredients in a large pan for 30 mins(enough to get really lovely ginger taste) then pour into barrel , make sure water is lukewarm and add 2 sachets of champagne yeast.
Wait 7 days. Bottle , leave for further 7 days at room temperature then chill and enjoy!
Finished product will be around 4 - 5 % proof!0 -
I freeze it whole and grate it frozen, just picking out any big bits of skin. It lasts for ages.somewhere between Heaven and Woolworth's0

I am at this moment drinking a tea made from grated ginger/honey and cinammon.
Last night I also used some grated ginger with soy sauce, honey and marinded chicken thighs for a while before cooking them.0 -
