    Peel, cut into chunks and freeze it. If you let it defrost slightly, you can grate it fairly easily the next time you want to use it.

  • I just freeze it as it is and then scrape or grate it when it's frozen. It'll last for ages in the freezer. If you also keep chillis and spring onions frozen you'll have the basis of a lovely stir fry.

    I'm no expert but there are lots of other google links with ginger growing. I keep meaning too...but forget. It does shoot really easily though, and ginger rose in price quite steeply last year so worth trying IMO.:)

    ginger can be frozen,but why not try adding it to stirfries?

    I prefer to keep ginger frozen, so there are certainly no worries on that front. It grates at least as easily as fresh, and I think you lose less of the oils to the atmosphere in the process (but that isn't any more than a feeling).

    You could add it to hot water & lemon as a lifting drink

    Ginger Tea Recipe

    water, 4 cups
    2-inch piece of fresh ginger root
    optional: honey and lemon slice

    If you grate a piece of ginger onto a piece of muslin, screw it up, and squeeze out the juice, you can add that juice to just about anything... soups, stews and casseroles for a warm lift, cake mixes, biscuit recipes, hot chocolate drinks, tea, fresh fruit salad, rice pudding....

    Grate some of it very finely and add it to chocolate brownie mix.
