    I have been on the DFW site for a while now, but need to start looking at my weekly groceries and getting that down. On average I spend about £50 per week for 2 adults and 2 children, one in nappies. We have cut our takeaways down to maybe one a month. So last week I made chicken chowmein and egg fried rice on Saturday evening. It was lovely, however I have quite a bit of fresh ginger left over and half a bottle of Hoi Sin sauce left.

    Does anyone have any ideas to use up the ginger, how long will it last? And can I freeze the Hoi Sin sauce in ice cube trays? I am starting to hate throwing things out.

    Hiya :)

    I'm not sure about the sauce but you can freeze the ginger with no problems. When you need some for a dish, just grate it while still frozen and put any remains back in the fridge for another day.

    I had heard that you could freeze root ginger but I have never tried it - I remember Ainsley Harriot mentioned this on Ready Steady Cook. However I just found this information on a website, which gives the history and facts about all ginger:

    "Selection and storage
    Fresh ginger can be found in the produce section of most grocery stores. Look for smooth skin with a fresh, spicy fragrance. Tubers should be firm and feel heavy. Length is a sign of maturity, and mature rhizomes will be hotter and more fibrous. Avoid those with wrinkled flesh, as this is an indication of aged ginger past its prime.

    Fresh, unpeeled root should be wrapped in paper towels, placed in a plastic bag and refrigerated up to three weeks. It can also be tightly wrapped and frozen up to two months. (To use frozen ginger, slice off a piece of unthawed root. Re-wrap unused portion tightly and return to the freezer.) Peeled gingerroot can be stored in Madeira or Sherry wine in a glass container in the refrigerator up to three months. However, storing peeled ginger in wine will impart a wine flavor to the end ginger dish, so you may wish to forego this pre-prepared method for use in dishes where a wine flavor is not desirable."

    Freeze the ginger - just pop it in a freezer bag, take out and peel & grate what you need, then pop back in freezer.
    Or, you can grate it all, then freeze it - I would spread it on a tray/plate - freeze, then bag, so that it's not all stuck together, so you can use as much or little as you like.
    Or you can grate and bung in jar covered with white wine vinegar, which will preserve it, keep in the fridge.

    Am sure you can freeze leftover Hoi Sin sauce, but not sure I would want to freeze that now as you used it on Saturday - probably would have been better freezing rest immediately or on Sunday. Since I don't buy shop bought sauces as a rule, someone with more knowledge can put you right on that one.

    Thanks all, I am definitely going to freeze the ginger, so glad that doesn't have to be thrown out and I can still use it from the freezer. I will be looking into recipies now to use this over the next month or so.

    Is the hoi sin sauce a cook in sauce or is it just hoi sin sauce (as in thick and gloopy? If it's the thick and gloopy type, it will keep in the fridge for months!
    I have the mind of a criminal genius. I keep it in the freezer next to Mother....

    Peel it, put it in a little bag/tub and put it in the freezer.You can grate it from frozen for use in recipes.HTH
