    If you've room in the freezer it freezes really well - I tend to keep a root in a bag and just snap off a 'nubbin' when I need it. You could try to turn it into stem ginger but it'll be a REALLY long drawn out process, in terms of candying it.

    If i bought one, how would i store it? and apart from using it for baking is there any other uses for it? thanks :D
  • Good question..as I bought one for the very first time last week for a curry I was making.

    Seems a waste to just throw it? :confused:

    You can prepare it and freeze it.

    Or you could make some homemade Ginger beer.

    I store mine in the fridge. I use it in curries, casseroles, thai cooking, jam and chutney (as well as baking ;) ). I had HM rhubarb and ginger jam on toast for breakfast.

    I'll add this to the existing root ginger thread to keep ideas together :D

    grate and steep in boiling water for ginger tea, add apple juice, mmmm! (I firmly believe this kills flu bugs stone dead based on experience, ginger is very antiviral).

    When I buy root ginger there is always far too much, so I peel it, cut it into 1" pieces, wrap each one in cling film, put them all in an airtight bag and pop them in the freezer. Then when I have a recipe that requires ginger I just take one out of the freezer and it's ready peeled! It's also easier to grate when it's frozen.

    I agree grating from frozen is good, but I keep it in a large piece as cutting into 1inch pieces, then grating means i also get grated finger in the mix!!!

    I buy a load from the Asian grocer, roughly puree it in the food processor, freeze it in ice cube trays then tip it into freezer bags, & I have ready grated ginger any time I'm in a hurry or don't have any fresh in the fridge :)
