Incredibly impressed and put totally to shame by all on here. Need to start planning much more, obviously

One good idea for cheapie fruit is to get all you can on a whoops ticket (10p per bag of apples etc) and then put them throught the juicer and freeze the juice into wee fresh fruit ice lollies- tasty, cheap and good for you!

    1 tin chopped tomatoes
    1 onion
    i veg oxo stock cube

2 serving spoons of left over brocolli from sunday lunch
2 serving spoons of carrots left over from sundays lunch
    salt and pepper
    bread crumbs
    olive oil
Cook the pasta. Fry the onions and then add onions, stock cube and seasoning. Cook for a few minutes, mix into the pasta, along with the finely diced left over vegetables . place in a big ovenproof dish, top with breadcrumbs that have been blitzed in the food processor with some olive oil. WARNING!
Pastry recipe i gave for jam tarts, tastes brilliant if you eat them the same day as you cook them, but just had one today, they are rather chewy!!! The quiche is delicious, as i guess the pastry stays soft from the egg and milk. thumbs up for freshly baked ones!

    Good morning,
When i make the lentil dhal, i usually just put it all in a saucepan and simmer it together, then add more stock or water when needed. I would imagine that if you fried the onion first it would add a better flavour to the dish. Give it a try and let me know what you think.

Well done mumof4, I'm a mom of 3 and we could do with getting our budget that low but are no where near! I'm going to go and try your pastry for jam tarts. The kids would love those as a treat, and I'm sure they won't mind chewy pastry tomorrow!!
I've got lemon curd that needs using.
Keep posting your ideas, I need all the help I can get!:o

Big Cheer for MUMOF 4 from another mum of 4.
We recently posted our SOA on the DFW board and one of the suggestions was to save money on food. I have budgeted for £85 for the 6 of plus dog.
Your thread has come along at the perfect time.
    Keep it coming!

    Hi,
I dont know whether every one is bored of my large family meals now, but I thought I would post yesterdays very successful tea! With the most amazing hm chip shop style curry sauce!

Pitta breads stuffed with Vegetable rice and Chip shop style curry sauce!served 6

    To make vegetable rice.
Cook 10oz of long grain rice for 5 minutes, then add 6oz of frozen mixed veg, and one vegetable stock cube crumbled. Continue to simmer until rice and vegetable are fully cooked. Fry an onion in olive oil. Rinse the rice and vegetable off with some fresh boiling water from the kettle. Mix in the cooked onion, and some worcestershire sauce.

    To make curry sauce
    1 onion diced small
    1 apple diced small
    2 tablespoons of butter
    1 pt of vegetable stock
    2 tablespoons of tomato puree
    1 tablespoon of curry powder
    2 oz of flour

fry onion and apple for a few minutes, add the flour and curry powder, gradually add in stock ,and tomato puree, simmer for 20 minutes.

Toast large pitta breads. cut in half, spoon in rice and some curry sauce.

    Children loved it!!

    Childrens favourite tomorrow

    Tuna and sweetcorn lasagne.

    8 value lasagne sheets
    1 tin tuna
    1 400g tin sweetcorn
    1 pt vegetable stock
    1 garlic clove
    1 onion diced
    1/2pt milk.
    1 1/2oz flour
    2 tablespoons of butter

fry the onion and garlic until softened, add the flour, mix, then gradually add the vegetable stock and milk, add tuna flakes and sweetcorn and bring to a simmer. The sauce will stay very runny.

Spoon half the mix into a lasagne dish, cover with 4 lasagne sheets, spoon over remaining half of the sauce/tuna/sweetcorn, then cover with last 4 lasagne sheets.

I then, grate some cheese over the top of the lasagne sheets, and then spoon a little water over the top, so that the top layer of lasagne sheets dont dry out.

Bake in the oven for 40 minutes.
