chunky 79- Glad i made you laugh, I was asked to post my grocery list and meal plans so that was what i did, forgetting to add that a lot of my veg was already in the house, my larder cupborad was full to the brim and that i was given a lot from mil. Plus the majority i my meals i had listed there we all made form fresh vegetables anyway or had loads of fresh vegetables on the side. The kids dont eat a lot of fruit. I have weeks where i buy loads of it, and only one of them will touch it, preferring to eat tinned peaches and pears!!
Lentil dhal recipe. I play around with this one, adding what i fancy to the basic recipe, carrots, mushroom, peas etc whilst it is cooking. Sometimes i add curry powder for a spicy version. It makes a lovely pate cold, if you make it without the added extras!
serves 4-6
12 oz red lentils
2 onions
2 stockcubes mixed with 1 1/2pts of water
1/2 tsp dried mixed herbs
Put all in ingredients in a pan, and bring to the boil, reduce hear and simmer for 15 minutes until lentils are cooked and have absorbed the liquid.
We also love easy vegetable pie, great for left over vegetables
Make up some pastry with 8oz flour, 4oz butter and some water
10oz cooked left over vegetables
Can of mushroom soup
1 tsp mixed herbs
pepper and a little milk
put the vegetables in a shallow pie tin, mix in herbs and soup, top with pastry and bake for 30 minutes until golden.
I have searched for years to find a ready made vegetable pie that tastes great, and nothing ever does, always tasting of cheese powder, yuck. This is the best!!!It's the start of the no takeaway challenge.0 -
I love your veg recipes. They are cheap, nutritious and fun. I think my daughter and I will be going for the peaches cookies. It sounds easy and what we usually have in the house. We have some Lidl cornflakes to use up (not favoured in this house so I end up eating them. As I usually eat muesli or porridge in the morning they take an age to eat because I mix it with muesli. This way I can enjoy the cookies and not eat stale cornflakes for an age). Thank you very much.0

Well do you know what i have done now, i scrapped my original meal plan, decided it wasnt challenging enough!Cancelled my online tescos order and gave myself a harder challenge. I have to save as much money as possible to get medical treatment for my daughter that we cant get here.
My mum has done my shopping for me as my daughter wasnt well enough to come out. My list comprised of these thing, but this is by memory mind, so forgive me if the obvious isnt on there!

My dessert is just cooking, not sure what it will turn out like, but looks and smells good!
1 tin fruit cocktail, 6 oz self raising flour, one egg and 1 1/2oz sugar. All mixed together and put in a greased dish in the oven. May serve like a cake, or with custard. I dont think there will be much of that leftIt's the start of the no takeaway challenge.0 -

glad you are enjoying them, if you make the flapjack, you may like to add some mixed spice and a small amount of brown sugar to the recipe!

Hi MUMOF4 Want to try your pudding. What size tin of fruit did you use and what oven temperature should i cook it on.I always have tins of fruit lurking in the cupboard and Mister Noah and Master Noah both love pudding0

Congratulations on your energy, Mumof4...only thing on your list I would have bought differently was that I never buy chopped tomatoes...whole ones are about €.10c cheaper here so I just cut them up in the tin with a scissors...good idea for someone else to do your shopping as they will only buy what you have listed, my OH would probably leave half off and buy some nonsensical and invariably expensive substitutes!

400G Tin of fruit, its a really stick gooey pudding as i used fruit in syrup, you would have to adjust sugar if you are using fruit in juice.I have just had a mouthful, the kids were right it was yummy!
I try to make as many desserts as i can without adding any fat,i know its high in sugar with the syrup in, but thats what having a dessert is all about, myself and the children dont eat biscuits, just my husband with his cup of tea, so i dont worry about the sugar in there main meal dessert. They dont tend to eat very often between meals actually, i get the cheap crisps in, which tend to sit in the cupboard as they are 'boring'. I just make sure i fill them up well at lunch and tea. They do always look for supper though, one always has noodles, one always has cereal, one has crackers and my little one has a bowl of porride!!It's the start of the no takeaway challenge.0 -
