chameleon and mother noah, glad you approved of my cheapy dessert, great idea using pears and cocoa powder, that sounds like a good combination!I will have a go at that later in the week!
My challenge this afternoon has been to make the humble jam tart even cheaper than i am already doing. I use value everything usually, but today, i am making pastry without fat!!They are cooking in the oven at the moment, looking good, lemon curd and jam sizzling away. I made the same pastry yesterday and made vegetable parcels, that worked, so we are experimenting with the same pastry on the bottom of a jam tart!I will let you know what my 4 taste testers think!!
It's the start of the no takeaway challenge.

Now, i have only had one official taste tester my daughter, who has just yelled up they are good, so heres the recipe.
    2 cups of plain flour
    1tsp of sugar
    1/2tsp of salt.

Then you need to keep adding water slowly and mixing until you get a dough. after you have rolled it out you need to work with it quite quickly as it gets sticky fast.use plenty of flour on your worktop. I just used sainsbury basic flour.
I made 12 jam tarts, and a bottom of a small quiche which is cooking at the moment, with half a tin of tuna, some herbs and couple spoonfuls of sweetcorn, the mixed some egg and milk and poured over the top. that can be childrens light lunch tomorrow, with left over potato salad. there was only enough pastry left for a bottom, so its my no sided quiche!!!lol

We used the same pastry to make oven baked spring rolls, yesterday, filled with fried mushroom, onions, courgettes and pepper, then mixed in a bit of soya sauce.

    Hope your family enjoys them!

Mother Noah-Can I have your home made lime curd recipe, sounds great!

Lime curd 3 ozs butter ,8ozs sugar,Grated rind and Juice of two limes and three eggs.Put butter sugar lime juice and rind in a saucepan and heat gently until dissolved .Add the well beaten eggs and cook stiring until thick. This takes about 15 minutes.Put in sterilized jars ,cool and store in the fridge .Keeps for 6 weeks. You can use a double boiler or basin over simmering water if want but I never do and have not had any problems ,just stir all the time it cooks. You can replace the limes with lemons or small oranges instead.Dont know how to do a recipe as a list and other half is at work so cant show me how.Hope you can follow it ok
