I do this all the time, just slice & freeze. The peppers will be good for cooked dishes but not for eating raw. HTHSometimes not moving backwards is as much an achievement as moving forwards is on other times. (originally posted by kidcat)

Yes, they'll be fine. I grew some peppers in my greenhouse last summer & had lots all ready at once. I chopped them and just froze them in yoghurt pots for pizza toppings & bigger portions for other recipes. They seemed to do fine cooked straight from frozen as well. I freeze peppers all the time, like everyone else has said - chop/slice and open freeze then bung them into a bag.
So as not to create a whole new thread for a very similar question, hopefully someone who comes to answer about freezing peppers can help: do you think it's necessary to blanch/pre-cook parsnips before freezing, or can I slice them up and open freeze them in a similar way to peppers/onions etc? I have a bag that I bought when it was reduced, intending to use them for roasting or making veggie mash, but if freezing is going to ruin them I won't try it and I'll just have a lot of parsnips over the next two days!

I have frozen parsnips before and had them added to soup and also as part of a mixed veg I boiled in the slow cooker. They go a little mushy so soup/casserole etc they are good for but I wouldn't use them for serving as a veg. we grow parsnips on allotment and I freeze them all the time. I parboil them for about five mins, open freeze and bag them up. Sometimes if I have oven on I bake them and then freeze, when I need to use them they do not take long to bake. They are never mushy. I always have a supply in freezer to save me trips to the allotment.0

I have 6 mixed coulour peppers that i won't have time to use, can i freeze them in their raw state?? would hate to throw them away, any ideas?

I buy peppers when they are on offer, chop and freeze them with no problems at all.
