Hi All,
A bit of advice needed please. Thelovely people at Tesco have givemme twice the number of peppers I ordered without charging me
Needless to say I am not returning them which leaves me with dealing with the storage side of things. Am I able to freeze them?If so do I chop them first???
Any help appreciated.

I freeze them chopped. They go rather soggy when defrosted but they are absolutely fine for cooking with, even in stir fry unless you only like them crunchy. I just thrown them in still frozen.0

I understand they are one of the few veg that can be frozen successfully without blanching them first - at least I hope so as I have 2 large bags of them in my freezer
I just washed, dried, de-seeded and quartered mine, popped them in a freezer bag and they still look fine.

If I have too many peppers I chop them finely and freeze on a tray before putting into a bag. This stops them sticking together. They are great for adding to casseroles or bolognese sauces.

As everyone else has said, they do lose their "bite" when frozen, but fine for adding to stews, casseroles etc. I can't get past roasting veggies before freezing, and peppers are included. Cut into chunks, put on tray, drizzle with a little olive oil, sprinkle on any herbs and spices that you like, bung in oven for 20-30 mins. Cool and freeze in usable portions. Use for stews, casseroles, pizza, whatever.0

If you don't wish to freeze them and you will use them within 2 weeks - they should be ok stored in the veg box in your fridge.
*I shall only admit this once ... I have a green pepper, not my most fav. still in my fridge from 4 weeks ago... it is still looking rather perky ... but I do know that the moment I chop it, it will need cooking pronto because I've been a lazy Queenie

Queenie, I also have just kept peppers in my fridge for longer than I should! I have also discovered that when red peppers go all wrinkly, that's when they are at their best for making roast red pepper and tomato soup. They seem to have "more" flavour.
Edited to add: I'm sure there is a recipe on here for red pepper and tomato soup, I just can't find it at the mosorry!

I just slice them and freeze them. It's best (if you can) to freeze them 'loose' on a tray first, otherwise they can stick together in a big lump. I do find that they go a bit squishy when they're defrosted, but it's not a massive problem.0
