    I just slice or dice them, then put them in the freezer on a baking tray. Once they're frozzed I bag them up, stops them becoming one lump.

    Never thought about freezing a pepper. When i go to get them from the fridge just find a very soft wrinkly pepper, so will indeed slice/dice and freeze thankyou.

    What about fresh rhubarb? Can I just chop it and freeze or should I cook it first?

    I normally stew it first, as I generally only eat it in crumbles etc, but this website says you can freeze it 'raw'.

  • I have a glut of peppers in the garden at the moment and I have been chopping them up and freezing them for curries, pasta sauce etc over the winter.(wish I knew this a couple of years ago!) I have got family over to stay at the end of the month and want to make use of my free supply of peppers - if I stuff them and freeze them would this work do you think? Or would they go all limp like frozen tomatoes when they are defrosted?:confused:

    I don't want to experiment and then have to throw out any disasters, any advice appreciated!

    Hi Gironde Gal,

    I've never frozen stuffed pepper but I freeze chopped pepper and when defrosted they are quite limp and only really fit for casseroles etc.

  • I freeze chopped peppers all the time. I just chop and freeze. I dont defrost when i use them. Have used them with success on Pizza, stir fry, pasta etc.....
  • Hmm, I was going to make stuffed peppers (stuffed with beef mince if that makes a difference) and I was just going to freeze half before cooking. Am I right in thinking that I shouldn't do this and we should just eat the things two days on the trot so I don't have to throw them away?
